Boneless Stuffed Baby Chicken « Adventures in college apartment cooking

Know that I had learned how to actual debone a chicken the proper way I wanted to do it again. This time I had a baby chicken to do so it was a little bit harder, it being smaller, but in the end I had a whole bird to myself. I stuffed the bird with some hot Italian sausage and bread crumbs. No dietary meal here.

I still had an impossible time wrapping the bird up properly so just sort of tied it up all over so none of the stuffing was falling out.

For my side I made mashed potatoes but with a bit of a twist. I had some radish greens around so figured I would just wilt them a bit, they taste like spinach this way, and mix them in with the mashed potatoes. It was really good. Just enough of a bitter green taste. Then made gravy with the copious amount of drippings let off by the chicken and its sausage stuffing.
