Baked Apples filled with Cookies and Toffee Sauce - Gebratene Äpfel mit Keksfüllung und Karamellsauce

this is a dessert i made after christmas and i filled with all kinds of leftover cookies. I used the the little bitt of toffee sauce that was left from a sticky pudding my mom had made and created this fast dish.
It smelled wonderfully and is just perfekt after a long day in the cold.
I went to the farmers market and found jumbo apples (Idared) at an organic booth -, i tasted a sliver and they were nice and a bit tart - perfect for baked apples... i took a bag home and last week i turned them into thos giantic baked apples.... at the end i drizzled the caramel sauce over and we ate them plain - no vanilla sauce or ice dream - but if you wanted to you could serve it with that.

Baked Apples with Cookie Filling

4 big tart apples, cored and cut
1 cup crumbled christmas cookies of all kind
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
1/4 cup dried cranberries (currants or chopped raisins)
1 Tbsp butter
3/4 cup boiling water
 
Preheat oven to 375°F. Wash apples. Remove cores to 1/2 inch of the bottom of the apples. It helps if you have an apple corer, but if not, you can use a paring knife to cut out first the stem area, and then the core. Use a spoon to dig out the seeds. Make the holes about 3/4-inch to an inch wide.

2 In a small bowl, combine the sugar, cinnamon, cranberries, cookie crumbs and pecans. Place apples in a baking pan. Stuff each apple with this mixture. Top with a dot of butter (1/4 of the Tbps).

3 Add boiling water to the baking pan. Bake 30-40 minutes, until tender, but not mushy. Remove from the oven and baste the apples several times with the pan juices. Drizzle the toffee sauce onto the apples 2 min before serving.

Serve warm with vanilla sauce or ice cream on the side.

Makes 4 servings.

 
Toffee Sauce
 
1 1/2 cup brown sugar, packed
2 tbsp corn syrup
3/4 stick butter
dash of salt
2/3 cup whipping cream
2 tsp vanilla
 
Put the sugar, syrup and butter in a pan and slowly bring to the boil, allowing the butter to melt and the sugar to dissolve. Let the mixture bubble for a couple of minutes before carefully adding the cream. Cook for another 2 to 3 minutes or until the sauce is thick, sticky and glossy.






 
 
In der letzten Woche habe ich diese Bratäpfel gebrutzelt. Ich war bei meinem Bio Obsthändler und da habe ich diese Jumboäpfel gesehen - Idared, schön leicht säuerlich und Puppenkopf groß... ich habe schon seit Jahren nicht mehr so große - schön ungleichmäßige natürlich eÄpfel mehr gesehen und musste sie gleich mitnehmen -perfekt für gefüllte Äpfel... Zuhause überlegte ich mir eine Füllung und da ich von einigen Kekssorten und Lebkuchen noch vereinzelte Reste hatte - wurden diese Rasch zerbröselt, Cranberries in heißem Wasser eingelegt (ich nehme auch gerne in Rum eingelegte Rosinen), Nüsse gekackt und die Äpfel ausgehölt... gefüllt und dazu habe ich dan noch Reste der Karamellsauce, die meine Mutter die Tage zuvor gekocht hat für einen Sticky Toffeee Pudding, verwendet... Dies war natürlich sehr oppulent aber durch die Säure der Äpfel gar nicht so süß... dennoch habe ich auf Sahne, Vanillesauce oder Eiscreme verzichtet...
Also wenn Ihr noch Kekse übrig habt oder Lebkuchen oder Stollen - ab in die Äpfel und zaubert Euch bei dem schönen Winterwetter einen Bratapfel...
 
So das war es erstmal mit den Süßigkeiten ich verspreche es - ich habe in der Zwischen Zeit auch 2 Brote gebacken einmal ein Portugisisches Maisbrot sowie ein Mehrkornbrot das ich noch bloggen möchte...

Bratäpfel mit Keksfüllung
 
4 große Äpfel ( Boskop, Idared, Gravensteiner oder andere säuerliche Sorten)
1 Tasse Kekse, zerkrümelt
1/4 Tasse braunen Zucker
1 TL Zimt
1/4 Tasse getrocknete Cranberries
1/4 Tasse gehackte Nüsse
etwas Butter
 
Den Backofen auf 180° C vorheizen. Die Äpfel waschen und das Kerngehäuse entfernen am Besten nicht duch den Apfel durchstoßen - damit die Füllung nicht rausläuft, sollte es nicht anders gehen eine Scheibe Alufolie um den Boden des Apfels legen. Die Äpfel in eine gefettete ofenfeste Form geben.
Die Zutaten für die Füllung mischen und in die Äpfel damit befüllen und eine Nuss Butter draufgeben und für 30 - 40 Min auf unterster Stufe in den Ofen geben. Kurz vor dem Servieren die heiße Karamelsauce drüber träufeln
 
Karamellsauce
 


1 1/2 Tassen braunen Zucker
2 EL Rübensirup, hell
3/4 Tasse Butter
Prise Salz
2/3 Tasse Schlagsahne
2 TL Bourbon Vanille

Gebe den Zucker, Sirup und Butter in einen schweren Topf und bringe es langsam zum schmelzen, verrühren und dann zu einem leichten kochen. Lass die Mischung ein paar Minuten blubbern und dann rühre ganz vorsichtig und langsam die Sahne ein. Reduzier die Hitze und lass es 2-3 min kochen bis die Sauce dickflüssig, klebrig und glänzend ist.

Chestnut Chocolate Pots - *~* - Maronen - Schokoladen Creme

as a dessert i used Nigellas Chestnut Chocolate Pots for the Holidays - embarressingly easy, devilsh and feels like made from a pastry chef!
It's true you need a processor, though you could just chop well and whis using a lot of elbow grease. As lazy as this is you can focus on the main dish and the guest... prepeare this the night before and relax... everybody that loves or is adicted to chocolate as i am will kiss you for this wonderfull rich and bittersweet concotion...

Chestnut Chocolate Pots

175 g best quality dark chocolate
125 ml creme double plus more to serve if you please (you could also use 125 ml whipping cream and 3 tbsp of cream cheese as a substitute for the milk and creme double)
125 ml whole milk
1 egg
1x 250 g can sweetened chestnut puree (or homemade)
2x 15 ml dark rum or brandy (optional)

Crush the chocolate to smithereens in the food processor.
In a saucepan, heat the cream and milk until just about boiling and, with the motor off, pour into the processor through the funnel over the chocolate.
Let it stand for 30 seconds. Process for 30 seconds, then crack the egg down the funnel and process for 45 seconds more.
Add the chestnut purée and rum through the funnel, and process until everything is incorporated.
Remove the blade and, using a rubber spatula and a spon, fill 6x 125 ml glasses or pots.
Let chill overnight in the fridge to firm up.
If wished put a jug of unwhipped double cream on the table and let people pour it over the pots as they eat.

Make ahead: Make pots up to 2 days before, cover with foil.

Freeze ahead: Spoon mixture into freezeable ceramic serving dishes, cover and freeze for up to 1 week. Thaw overnight in the fridge.

als kleines Dessert habe ich das für die Weihnachtszeit vorbereitet - ein so einfaches Rezept das es fast keiens ist aber die Wirkung ist sensationell - ein wunderbarer Pot de Creme - schnittfest und teuflisch schokoladig - je besser die Schokolade desto besser der Geschnak - bitte nichts sparen!
Dieses Rezept habe ich von Nigella Lawson... Alle habe es mit Seufzern und Stille gegessen... ich auch... es war ein Traum... Eine Sünde die ich mir nur ganz ganz selten erlaube da ein Milchprodukt.... Also wer ein schnelles Dessert braucht das Dessertliebhaber überzeugt udn nicht die übliche Mousse au Chocolate oder Molton Cakes oder ähnliches anbieten will könnte es hiermit mal versuchen! Für diese Versuchung eignet sich am besten ein gute Küchenmaschine oder Food Processor

Maronen-Schokoladen-Töpfchen

macht 6 Portionen

175g beste Zartbitterschokolade
125 ml Creme Double
125 ml Vollmilch
1 Ei
1x 250 g gesüßtes Maronenpüree
2 x 15 ml braunen Rum oder Brandy (kann man auch weglassen)

Die Schokolade in der Küchenmaschine zerkleinern. In einem kleinen Topf die Milch und die Creme Double fast zum Brodeln bringen und, mit dem Motor ausgeschaltet, in die Küchenmaschine füllen.
Etwa 30 Sekunden stehen lassen und dann für 30 Sekunden pulsen., nun das Ei hinzufügen und weitere 45 Sekunden verarbeiten.
Das Kastanienpüree und den Rum hinzufügen und weiter mischen bis alles gut miteinenander vermengt ist.
Die Klinge entfernen udn mit einem Silikonspatel und einem Löffel die Masse in 6x 125 ml Gläser oder Keramiktöpfchen füllen, mit Frischhaltefolie abdecken und über Nacht im Kühlschrank festwerden lassen. Bei Zimmertemepratur servieren...mit etwas ungeschlagener Creme double servieren wer mag oder Früchten....

i made a few fingerfood bites for Christmas Eve... something that could be done in a hurry and would be loved by everyone... Happy Christmas  - Love Alissa

So i made: Devilled Eggs, Dips and Vegetable sticks, Crackers, Chips, spicy nuts, goat cheese in brick dough and the following... i also made a terrific pumpkin carrot soup - but while we opend presents it burned because i forgot... what a smell and what a loss... but i guess that can happen to anybody..lol

Cranberry and Soy Glazed Sausages

This is a typical party treat with northern americans and british people! I wouldn't leave them out the are a joy at every party - this sweet sharp glaze can be also used for spare ribs or 30 chicken wings with equal lipsmacking results... Enjoy Nigella Lawson

Makes 50

125 ml cranberry sauce or relish
60 ml thai sweet chili sauce
60 ml soy sauce
1 tbsp brown sugar
juice of 1 clementine or satsuma
juice of 1 lime
50 cocktail sausages

Preheat the oven to 200°C/ gas mark 6 0r 400°F. Put the cocktail sausages in a foil lined tin or better still , a throw away foil baking dish.
Mix chilli, cranberry and soy sauce in a measuring jug and whisk in the sugar along with the juices.
Pour glaze ofer sausages and turn them so they are evenly coated, before putting the tin in the oven for 30 min, with a gentle turn over after 20 min, by which time they should be hot, burnished and gorgeously sticky (If cooking chicken wings or ribs, having marinated them overnight in the goo, you will have to up the cooking time: the wings will need 45 min; the ribs an hour.)
When serving, provide cocktail sticks and napkins or make sure oyu have finger bowls or babywipes to hand!

Make ahead Tip: Put all sausages into a large sealable bag and add all the other ingredients. Shake or stir everything together until the sausages are well coated and leave in the fridge for up to one day. When ready to use just tip everything into a cooking tray and cook as directed.

Freeze ahead Tip: Make ahead as above and freeze for up to 3 months. Thaw overnight in the fridge.


Drunken Devils on Horsebacks

Makes 24

this is a treat that goes back in the 1890s and has been a party treat ever since... If you serve this to children make them without the booze! Enjoy

24 ready to eat stoneless dried prunes
50 ml Armangnac or Cognac
12 rashes Bacon or 24 slices pancetta

The day before your party, soak the prunes in Armangnac in a covered dish.
On the day of your party, preheat the oven to 200°C, gas mark 6 or 400°F.
On a board, spread out rasherd of bacon and cut halt horizontally to give two shorter pieces of bacon, or use a whole pancetta slice. Then take a soaked prune from your bowl and roll up the bacon or pancetta, securing it with a cocktail stick.
Repat this process with the remaining prunes, wrapping each one in bacon and place them on a lined baking sheet.
Cook the drunken devils in the oven for 10-15 min, then let them cool a little to avoid burnt fingers and mouths, before plating them up to serve.

These can be made ahead 2 days in advance, soak the prunes. The day before, wrap in bacon and keep, covered, in the fridge. Allow 20 min at room temeprature before cooking.






Ham Sandwich Filling

1 1/2 cup of cooked ham, finely chopped
1/3 cup of mayonnaise
2 teaspoons of mustard
1/2 teaspoon worstershire sauce
1/4 teaspoon tabasco
finely chopped pickles
finely chopped sweet onions
salt & pepper
chives finely chopped

mix all together and chill for 1 hour in the fridge. Spread on your favorit bread, sandwich bread or fill a croissant...

Tuna Sandwich Filling

1 jar or can tuna ( maybe you look out for the fish and dolphin friendly version) in olive oil
6 cocktail tomatoes, seeded and finely chopped
6 olives, with out pit, finely chopped
juice of 1/2 lemon
1 shallot finely chopped
salt & pepper
basil & parsley finely chopped

mix together with a bit of the olive oil and let marinate for 1 hour in the fridge. Spread on your favorit bread. Will make bread soggy - please make last minute or use french bread or ciabatta!

ich habe beschlossen am Heiligabend diverse Häppchen zur Bescherung zu machen... es gab Dips, Chips und Gemüsesticks, gefüllte Eier, lauwarme gewürzte Nüsse, Fingersandwiches, Ziegenkäse im Brickteig, glasierte Würstchen und betrunkene kleine Teufelchen im Speckmantel..... Ichhatte auhc eine sehr leckere Suppe gekocht (Kürbis, Karotte Ingwer) leider ist diese verbrannt während wir die Geschenke ausgepackt haben - versehentlich hatte ich den Herd nicht runter sondern hochgestellt.. so ein Ärger aber was solls
... ich habe heute nacht noch Brownies gebacken - der Geruch ist nun auch weg... hier ein paar Rezepte:

Cranberry Sojasauce glasierte Würstchen

Rezept von Nigella Lawson

Macht 50 Cocktailwürstchen oder 30 Chickenwings oder Spareribs

125 ml Cranberrygelee
60 ml Thai süße Chilli Sauce
60 ml Sojasauce
Saft 1 frischen Clementine oder Satsuma
Saft 1 Limette
1 EL braunen Zucker
50 Cocktailwürtschen

Den Backofen auf 200°C vorheizen.
Die Würstchen auf einem mit Folie ausgelegten tiefen Backblech legen oder in eine wegwerf Aluschale (ohne Löcher!!).
In einer Schale die Saucenzutaten vermischen und über die Würstchen geben und die Würstchen wenden bis alle ebenmäßig bedeckt sind (wenn Sie Chickenwings oder Rippchen machen diese bitte über Nacht im Kühlschrank abgedeckt marinieren und dann die Wings 45 min backen und die Rippchen 1 Stunde)
Die Würste 30 Min backen bis sie schön klebrig und heiß sind. Die Würste mit Zahnstochern servieren.

Kann auch einen Tag vorher zubereitet werden alle Zutaten in einen Ziploc beutel geben schön durschmischen und im Kühlschrank aufbewahren und wie angegeben bereiten. Kann bis zu 3 Monate eingefroren werden und dann über Nacht im Kühlschrank auftauen und bereiten wie angegeben.

Teufel im Speckmantel

Macht 25 Stück - geht auch ohne Alkohol!

25 Trockenpflaumen ohne Kern
50 ml Armangnac oder Cognac
25 Streifen Bacon oder Pancetta

Die Trockenpflaumen am Tag vor der Party in einer bedeckten Schale in Armangnac einweichen und im Kühlschrank aufbewahren. Vor dem Backen auf zimmerteperaturbringen udn die Pflaumen in Bacon oder Pancetta wickeln und mit einem Zahnstocher fixieren und bei 200°C 10-15 Min knusprig backen. Vor dem Servieren 5 Min abkühlen lassen damit sich niemand die Zunge verbrennt!





Schinken Sandwich Füllung

4 Scheiben gekochten Schinken fein geschnitten
1/3 Tasse Mayonnaise
2 TL Senf
1/2 TL Worstershire Sauce
1/4 TL Tabasco
feingehackte Gewürzgurken
feingehackte eingelegte Zwiebeln

alles gut vermischen, abschmecken und etwa 1 Stunde im Kühlschrank ziehen lassen und dann kurz vor dem servieren zu Sandwiches verarbeiten oder auf Pumpernickel streichen oder ein MiniCroissant damit füllen

Tunfischfüllung

1 Glas oder Dose Tunfisch (bitte die Fisch und Delfin freundliche Sorte verwenden) in Olivenöl
6 Cocktailtomaten, die Kerne entfernt und fein gehackt
6 Oliven, entsteint fein gehackt (ich verwende eingelegte mit Kräutern vom Markt)
Basilikum & Petersilie (glatte) fein gehackt
1 Schalotte, feingehackt
Saft 1/2 Zitrone
Salz & Pfeffer

alles gut vermischen und abschmecken. Wer mag kann auch noch Kapern feinschneiden und hinzufügen. 1 Stunde im Kühlschrank ziehen lassen und kurz vor dem Servieren verarbeiten. Bitte beachten das dieses Füllung sehr nässt also am besten mit einem Salatblatt tricksen oder auf einem festen Brot ( Ciabatta oder Baguette) verwenden!

German Gingerbread - ** ~ ** - Elisenlebkuchen



This recipe was given to me from a german corner friend and i have had it in my christmas recip pile for years and finally gotten to make it - i have never ever made Lebkuchen myself and have to admit was a bit afraid it might go wrong and turn out hard or chewy or i burn them.... anyway this weekend while preheating teh oven for the roast i though you can half the recipe and give this a try - you have everything at home - be brave and try.... the dough was easy to make but a bit sticky and at first i had a hard time getting it evenly on the wafer. then i baked them - of course instant christmas smell in the house and i was sitting on the floor watching the oven like a child and looking like a hawk that nothing burns -lol... they turned out wonderfully soft and terrific tasting even my parents were so surprised - my dad very carefully took a tiny bite as he couldn't beleive one could make a lebkuchen at home ... it worked for he he took 3 with his coffee....
So if you still have these ingredients in your pantry and have 30 min to spare - whip this up - you won't regret it! you can make half the recipe without a problem!  I love these  - they are not so heavy and rich as the usual ones - i will make them again - Thanks Renate!

German Gingerbread

makes 24 Lebkuchen

1 lb brown packed sugar
6 eggs, divided
1 lb ground nuts
100g candied orange peel or lemon peel (or just mixed candied fruit for fruit cake)
2 tablespoon cocoa
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 lb AP flour
1 1/2 tablespoon baking powder
round wafers
chocolate glaze or sugar glaze

Preheat the ofen to 360°F and line to baking sheets with parchment paper. Cream the sugar and eggs till foamy and then add the nuts, lemon peel, cocoa and spices and mix well. In a different bowl whip the egg whites till stiff and set aside a moment. Add the flour and baking powder and carefully fold in the egg whites till everything is smooth and even. Then take the wafers and spread 1 tbsp of the batter with a knife that you dip in hot water nicely on the wafer and form it into a dome - it should be more in the center.

Then bake for 20 min till it puffed up and is lightly golden. Let cool completly and glaze with chocolate or sigar glaze if you like. Keep in airtight container for a few weeks.

von einer Freundin, aus einem amerikanischen Rezeptforum, habe ich vor Jahren in einer Weihnachtskarte dieses tolle Rezept bekommen - mich aber bisher nie getraut es zu versuchen. Ich war immer der Meinung Lebkuchen können nur Bäcker or Großbäckerreien in Nürnberg gebacken werden in guter Qualität... ich war mir sicher zuhause wird das bestimmt knüppelhart oder verbrennt oder wird gummiartig zäh.... aber bevor ich meinen Ofen für den Braten angemacht habe  juckte es mich in den Fingern und ich überwand meine Furcht und habe die Zutaten die glücklicherweise alles vorhanden waren geschwind zusammengerührt und mich an meinen Wohnzimmertisch gesetzt undMusik gehört und dabei die Oblaten mit dem zugegebenermaßen sehr klebrigen Teig bestrichen, nach dem 2 Lebkuchen bin ich dann auf die gloreiche Idee gekommen ein feuchtes Messer dürfte helfen...lach und dann lief das super und ich habe 12 Lebkuchen (das war die Hälfte des Teigs) geform und ab in den molligen Ofen und dann habe ich wie ein Kind vor dem Backofen gesessen und wie ein Adler die Lebkuchen bewacht damit ja nix passiert -lach..... Ich habe sie dann abkühlen lassen und zum Mittagessen zu meinen Eltern als Dessert mitgenommen - mein Vater hat mit etwas Skepsis hineingebissen und dann erstaunt die Augenbrauen gehoben udn gemeint sehr lecker und locker leicht... seufz Erleichterung... ich finde die auch sehr sehr lecker und viel leichter und nicht so mächtig wie die üblichen Lebkuchen (ich mag ja am liebsten die von Wicklein)

Elisenlebkuchen

Macht 24 Lebkuchen - man kann dieses Rezept aber auch sehr gut halbieren!

500g braunen Zucker
6 Eier, getrennt
500 g gemahlene oder feingehackte Mandeln
100 g Orangat und Zitronat
2 EL Kakao
2 EL Lebkuchengewürz
250 g Mehl
½ Päckchen Backpulver
Runde große Oblaten
Schokoladenguß


Zucker mit Eigelb schaumig schlagen, dann Mandeln, Zitronat, Orangat, Kakao, Lebkuchengewürz hinzufügen. Eiweiß zu Eischnee schlagen. Mehl und Backpulver mischen und das Mehl mit dem Eischnee zur Mandelmasse geben und gut vermischen. Den Backofen auf 170° C vorheizen und den Teig (1 ½ EL der Masse) mit einem Messer auf der Oblate kuppelförmig verstreichen, das Messer am beten in lauwarmes Wasser tauchen! Die Lebkuchen 20 Min backen und auskühlen lassen und wer mag mit Schokoladen- oder Zuckerguss überziehen.

Moist Triple Coconut Macaroons (GF + dairy free) - Saftige Kokosmakronen (Für Buntköchin)

this is another fantastic recipe from Americas Test Kitchen (Cook's Illustrated Holiday Recipes 2006). I have always wanted to make moist and flavourful coconut macaroons - they were either bland, dry, burned on top or too soft... so when i found this recipe in my magazin is was extremly happy and hoped, from the two page story on how they improved the usual coconut macaroon recipe from your recipe box, it would really work and come out with a great success.... I tell you they almost taste like a mounds bar... i don't have to go any fuirther as any coconut friend should really try this easy and foolproof way to make macaroons - the key product is the cream of coconut! this makes a wonderfl gift and takes just 30 Min to make!

Triple Coconut Macaroons
Adapted by Cook's Illustrated

1 cup cream of coconut (coconut milk is a substitue but will not be as creamy)
2 tablespoons light corn syrup
4 large egg whites
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups unsweetened, shredded, desicated coconut (about 8 ounces)
3 cups sweetened shredded or flaked coconut (about 8 ouces) ( if you have trouble finding it use fresh coconut flesh, shred it and mix with sugar)

Adjust oven racks to upper and lower middle position and heat oven to 375°F. Line 2 baking sheets with parchment paper and lightly spray with nonstick cooking spray.
Whisk together cream of coconut, corn syrup, egg whites, vanilla and salt in small bowl; set aside. Combine unsweetened and sweetened coconut in large bowl; toss together, breaking up clumps ith fingertips. Pour liquid ingredients into coconut and mix with rubber spatula until evenly moistened. Chill dough for 15 Min.
Drop heaping tablespoons of batter onto prepared baking sheets, spacing them about 1 inch apart. Form cookies into loose heaystacks with fingertips, moistening hands with water to prevent sticking. Bake until lighly golden, about 15 minutes, rotating baking sheets from front to back and top to bottom halfway through baking time.
Cool cookies on baking sheets until slightly set, about 2 minutes; remove to wire rack with wide metal spatula and cool to room teperature.

Chocolate Dipped Macaroons

Follow recipe for Triple Coconut Macaroons. Cool baked macaroons to room temperature, about 30 Min. Line 2 baking sheets with parchment paper. Chop 10 ounces semisweet chocolate; melt in microwave or in small heatproof bowl set over pan of almost simmering water.
Holding macaroon by pointed top, dip bottom and 1/2 ince up sides of each cookie in chocolate, scrape off excess with finger and place on baking sheet. Refrigerate until chocolate is  set about 15 Min.

diese Makronen sind ganz besonders für Buntköchin die so leckeres Kokosgebäck gemacht hat die Tage und ich versprach mein Rezept ebenfalls einzustellen. Wie Ihr wisst bin ich ein großer Fan der amerikanischen Zeitschrift Cook's Illustrated und in 2006 in der Weihnachtsedition fand ich ein Rezept für saftige Kokosmakronen - ich konnte es kaum fassen das dies ohne Chemie etc möglich sein sollte... also probierte ich es umgehend aus und hatte zum Glück gesüßte Kokosflocken aus Canada zuhause. In dem Artikel zu den Kokosmakronen und die Odysee zum perfekten Rezept werde ich mal lieber aus Copyright gründen nicht kopieren aber soviel sei gesagt es hat 100 und mehr Versuche und Test mit diversen Zutaten gekostet um ein Rezept zu gestalten das jeder anwenden kann und mit Zutaten die in jedem nordamerikanischen Supermarkt zu finden sind. Corn Syrup habe ich immer da sowie auch gesüßte saftige Kokosflocken - als Ersatzprodukte würde ich Glukosesirup oder Fructosesirup verwenden oder in amerikanischen Onlineshops in Europa den light Corn Syrup bestellen. Für die süßen feuchten Kokosflocken würde ich einfach eine frische Kokosnus öffnen das saftige Fruchtfleisch zerkleinern und zuckern - das müsste wunderbar klappen. Ich sage Euch die Makronen schmecken ähnlich wie Bounty nur besser ;-)) Der Trick für die Saftigkeit ist das frische Kokosfleisch und Kokoscreme! Übrigens die kleinen Happen sind in 30 Min gebacken - also ein super Last Minute Rezept!

Saftige Kokosmakronen

1 Tasse Kokoscreme (im Asia Shop (Cream of Coconut)- Kokosmilch geht aus ist aber nicht ganz so cremig)
2 Eßlöffel heller Maissirup oder Glukosesirup
4 große Eiweiß
2 Teelöffel Vanille
1/2 Teelöffel Salz
3 Tassen Kokosflocken, trocken
3 Tasse gesüßte Kokosflocken (Ersatz frisches Kokosfleisch, zerkleinert und mit Zucker vermischt)

Den Backofen auf 170°C vorheizen und 2 Backbleche mit Backpapier auslegen.
In einer kleinen Schale Kokoscreme, Sirup, Eiweiß, Salz und Vanille vermischen und zur Seite stellen.
Die getrocknete und feuchte Kokosnuss in einer großen Rührschüssel vermischen und die Kokoscremeflüssigkeit dazugeben und gut verrühren bis alles gut durschgemischt ist.
Die Kokosmasse in kleinen Häufchen auf die Backbleche mit einem Abstand von 2 cm geben und die Masse mit angefeuchteten Fingerspitzen in einen lockeren Heuhaufen formen (oben spitzer zulaufend) und für 15 Min leicht goldenbraun backen.
Die Makronen mit einem Pfannenwender auf ein Küchengitter zum Auskühlen geben. In einem luftdichen Behälter aufbewaren.
Wer die Makronen gerne schokolieren mag am Boden kann Sie nach dem Abkühlen in geschmolzene Kouvertüre tauchen!

Sesame Spicy Nuts - *~*- Würzige Nüsse mit Sesam



This weekend i was in need for some spicy brain food - i made this snack mix...A bit different in the spices but wonderfully delicious... i came up with this recipe that was adapted from the sunset magazine. They only thing that had me hesitate was the combination of sage and cinnamon - for some reason it still tickled me - i mean i am brave enough to try something like this but nuts are expensive and you don't fool around with precious ingredients... well you got htat right - i still gave this a shot -  i am glad i did...
BTW i was just watching "Northern Exposure" on DVD while i made this - as series that wasn't so successful in Germany but i loved it and finally was able to get the DVDs... My Dad showed up to ask me somesthing and wanted to call the fire department as the smell of this nut mix was strong - lol i was really shocked as nuts burn so easily and i raced to the oven to find a perfect snack mix - everything is fine... just the smell.
My son didn't even notice - he just enjoyed it...You taste the sage a bit but its not overpowering... the cinnamon is just very slight.
Its quite tangy and very crunchy - great with a drink or beer and as a start into a christmas dinner party. This is something we always have around during the season - this version is new  - lets see what the others say (if anything is left till then ;-) ) I also added some pumpkin and sunflower seeds and macadamia nuts.

Sesame Spicy Nuts

3 1/2 cups assorted nuts
1 cup pine nuts
2 tbsp maple sirup or honey
1 1/2 tbsp sesame seeds
3 tsp dried rubbed sage
3/4 tsp cinnamon
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 tsp freshly ground pepper
1 tbsp olive oil

Preheat the oven to 300°F and line two baking sheet with parchment paper. Mix all ingredients together in a bowl and divide and spread each half on one baking sheet evenly and bake till golden and fragrant for 25 min - stirring often. To prefent sticking turn nuts occasionaly while they cool. Store in airtight container.





ich hatte Gelüste nach einer würzigen scharfen Nussmischung - diverse Nüsse habe ich fast immer im Gefrierfach oder Kühlschrank - also war es gar nicht so schwierig dem Wunsch nachzukommen - viel komplizierter war welchen Geschmack ich dem Ganzen geben würde. Ich habe alle meine Rezepte sowie Magazine und Kochbücher durchgeschaut und bin bei einem Rezept aus dem Sunset Gourmet Magazin hängengeblieben. Nüsse mit Salbei und Zimt..hmmmmm kann das schmecken... jeder der mich kennt würde nun sagen - verrückt genug ist sie um das zu versuchen...ich habe es getan und ich finde es ist lecker... Es roch nicht so prickelnd wie andere Nussmischungen die ich gemacht habe während des Backens - mein Vater kam zufällig vorbei und fragte mich ob er die Feuerwehr rufen soll. Ich habe während der Backzeit in meinem Wohnzimmer "Ausgerechnet Alaska (Northern Exposure)" auf DVD geschaut (ich liebe diese Serie) und war ganz sicher alles ist gut bis er das sagte und  völlig erschrocken und dachte es wäre verdorben wegen des Geruchs weil Nüsse ja schnell anbrennen - nein - goldbraun lecker wurden sie aus dem Ofen gezogen... der Geruch ist auch verflogen und alles ist Gut -lach
Den Salbei schmeckt man durch aber der Zimt ist sehr verhalten - deutlich ist der Cayenne - nächstest Mal werde ich Piment d'Espelette verwenden - das ist würzig aber nicht so fordernd...
Ok versucht es mal - ich finde es passt super zu einem herben Bier oder einem Cocktail....
Würde perfekt zu einer Weihnachtsparty passen!

Würzige Nussmischung


3 1/2 Tassen gemischte Nüsse ( ich habe Macadamia, Pecan, Walnüsse, Cashew verwendet)
1 Tasse Pinienkerne (ich habe noch eine handvoll Kürbiskerne und Sonnenblumenkerne reingetan)
1 EL Sesam
2 EL Honig oder Ahornsirup
3 TL getrockneten, geriebenen Salbei
3/4 TL Zimt, gemahlen
1/2 TL Cayenne
1/2 TL Salz
1/2 TL frisch gemahlener Pfeffer
1 EL Olivenöl

Denk Backofen auf 150° vorheizen und 2 Backbleche mit Backpapier auslegen. Alle Zutaten gut vermischen und gleichmäßig auf die 2 Bleche verteilen. 20-2 Min golden backen und immer wieder wenden damit die Nüsse nicht anbrennen. Während des Abkühlens die Nüsse ebenfalls immer mal rühren damit sie nicht verkleben. Kann Lauwarm oder kalt serviert werden. In einem luftdichten Behälter aufbewahren.

Rolo Pretzle Turtles - Für Schnick Schnack Schnuck




This is a typical amercian treat especially around the holidays - something that can be done wiht children and is like by young and old - look pretty and tastes very very good - i like the combination of a salty pretzle with chocolate. On request of a blogging friend i took the opportunity to make this and show how this is done - its realy not a recipe but an instruction. If you are a friend of this kind of little treat plaese give this a try - make this with your kids or your friends kids or nieces or grandchildren - they wil have lots of fun ...

Nuts – toasted pecans/almonds/hazelnuts/walnuts or M&Ms

Preheat your oven to 350

1. Upwrap your Rolos. Place pretzels on baking sheet. Top with a Rolo.

2. Bake in oven for 3-5 minutes, until the chocolate just begins to melt. The Rolo should be soft but not completely melted.

3. Remove from oven, place on cooling rack and immediately squish the chocolate with a nut or m&m. Watch the caramel oooze out. If you like drizzle with melted white chocolate

dies ist für Schnick Schnack Schnuck - ein kleiner Snack der ganz typisch ist in Nordamerika - etwas das bei Jung und Alt sehr beliebt ist und von elegant bis verspielt angeboten wird entweder mit Nüssen verziert oder mit bunter glasur oder mit m&ms oder anderen amerikanischen Süßigkeiten... Es ist wirklich kein Rezept - mehr eine Anleitung - aber ich dachte so ist es einfacher  - ich bin ein visueller Mensch und lerne sehr viel mehr durch sehen und Bilder als durch geschriebene Wörter! Daher SSS hier sind Bilder und auch die Anleitung! Vielleicht probierst Du es ja aus und ich hoffe Du magst es... Für Kinder ist das eine schöne Beschäftigung an einem verregneten tag ein paar von diesen völlig ungesunden Happen herzustellen ;-))

Übrigens diese kleine Süßigkeit heißt Turtle (Schildkröte) weil sie durch die oben aufliegende Nuss entfernt an einen Panzer einer Schildkröte erinnert. Das Konfekt Schokolade, Karamell und Nuss hat eine lange Tradition und wurd ebreits in den 1930ern als Turtle Candy bezeichnet... genug Fakten ;-)

Mini Salzbrezeln

Nüsse (Pecan, Walnüsse etc auch gerne gesalzen) oder M&Ms, Smarties

Den Backofen auf 160°C vorheizen und ein Backblech mti Backpapier auslegen

Die Brezelchen mit Abstand auf das Blech verteilen und jeweils ein ausgewickeltes Rolo auf die Mitte stellen

Etwa 3-5 Min im Ofen backen bis die Schokolade zu schmilzen beginnt. Das Blech sofort rausnehmen und in die Mitte des Rolos eine Nuss oder Schokolade oder ein M&M drücken.

Lauwarm oder kalt geniessen - wer mag kann sie noch mit geschmolzener weißer Schokolade verzieren. Es gibt die Brezeln auch als Quadrate oder Kreise - das sieht hübscher aus als die typischen Brezeln!

Modern Mincemeat Pie



The pie may be served with whipped cream or vanilla ice cream. I used a jar of ready made mincemeat and made 24 Minipies in a miniature muffintray. I baked them in a preheated oven by 400°F for 5 Min an then turned teh oven down to 350°F and let them bake another 20 Min till golden brown and let them cool off and dusted with powder sugar! They will keep in a airtight container or tin for 4-6 weeks and will get better everyday!

Foolproof Pie Dough



- makes one 9-inch double-crust pie -


The trick to this pie crust is the inclusion of vodka. Eighty-proof vodka, which is 60 percent water and 40 percent alcohol, adds moistness to the dough without aiding in gluten formation since gluten doesn't form in ethanol. Although the recipe includes 8 tablespoons of liquid, the alcohol vaporizes during baking, resulting in a tender crust that only contains 6 1/2 tablespoons of water. Because of the extra liquid, the dough will be moister than most standard pie doughs and will require up to 1/4 cup more flour.




Ingredients


2 1/2 cups (12 1/2 ounces) unbleached all-purpose flour
1 teaspoon table salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into 1/4-inch slices
1/2 cup cold vegetable shortening, cut into 4 pieces
1/4 cup cold vodka
1/4 cup cold water


1. Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogeneous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage cheese curds and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.


2. Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days.
 



Mincemeat Recipe


3 Granny Smith apples , large (about 1 1/2 pounds), peeled, cored, and cut into 1/4-inch dice
3 McIntosh apples , large (about 1 1/2 pounds), peeled, cored, and cut into 1/4-inch dice
1 cup golden raisins
1 cup currants
3/4 cup packed dark brown sugar (5 1/4 ounces)
8 tablespoons unsalted butter (1 stick)
1/4 cup diced candied orange peel , (optional)
Grated zest and juice from 1 orange
Grated zest and juice from 1 lemon
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 1/2 cups apple cider , plus more as needed
1/3 cup rum or brandy

For the filling: Place all ingredients except 1/2 cup cider and rum in large, heavy saucepan set over medium-low heat. Bring to boil and simmer gently, stirring occasionally to prevent scorching, until mixture thickens and darkens in color, about 3 hours, adding more cider as necessary to prevent scorching. Continue cooking, stirring every minute or two, until mixture has jam-like consistency, about 20 minutes. Stir in remaining 1/2 cup apple cider and rum and cook until liquid in pan is thick and syrupy, about 10 minutes; cool mixture. (Mincemeat can be refrigerated for several days.)

ich habe am Wochenende typische britische Mincemeat Pies gebacken - ein traditionelles Wehnachtsgebäck mit viel Trockenfrüchten, Alkohol und Talg... Ich habe eine Glas Mincemeat aus England verwendet das ich geschenkt bekommen habe - aber man kann es selbstverständlich auch selbermachen!
In der bereits erwähnten Zeitschrift Cook's Illustrated war ein Rezept sowohl für das Mincemeat als auch für einen wunderbaren Teig mit Vodka! Der Vodka macht den Teig schön feucht beinträchtigt aber nicht die Backfähigkeit und der Geschmack des Alkohols verfliegt beim Backen und hinteläßt lediglich einen fluffigen Teig!
Ich wünsche Euch viel Spass damit.
Wer Interesse an dem Mincemeat Rezept hat dem werde ich es gerne senden. Ich habe mit einem Ausstecher Kreise aus dem ausgerollten Teig gestochen und in eine Minimuffin Form gegeben daraut 1 TL Mincemeat sowie einen ausgestochenen Stern. Dann habe ich sie im vorgeheizten Ofen gebacken 5 Min bei 200°C und dann habe ich auf 160°C runtergeschaltet und sie weitere 20 Min gebacken bis sie goldbraun waren.

Mincemeat Teig
 
2 1/2 Tassen Weizenmehl
1 TL Salz
2 EL Zucker
12 EL eiskalte Butter, ein kleine Würfel geschnitten
1/2 Tasse Palmin Soft in 4 Teile geteilt
1/4 Tasse kalten Wodka
1/4 Tasse eiskaltes Wasser


1. In einer Küchenmaschine oder Food processor 1 1/2 Tasse Mehl, das Salz und den Zucker vermischen dafür benötigt man 2 x 1 Sekunde Pulsen. Die Butter und das Fett hinzufügen bis der Teig beginnt zu kuimplen und kleine Kügelchen bildet. Das dauert ca 15 Sek. Den Teig mit einem Spatel vom Schüsselrand schaben und in die Mitte befprdern. Nun das restliche Mehl hinzufügen und pulsieren bis der Teig gleichmäßig ist - ca 4-6 pulsen. den Teig in eine Rührschüsselgeben. (Wenn Sie keine Küchenmaschine haben das ganze mit einem Pastry cutter oder mit zwei Messern das Fett und Butter mit dem Mehl vermischen bis das Fett gut in das Mehl eingearbeitet ist.) Nun den Teig in eine mittlere Rührschüsselgeben.
2. Den Teig mit Vodka und Wasser besprenkeln. Den Teig durchkenten und ein 2 teilen und zu einer Kugel formen und jeweils auf 23 cm Kreis ausrollen. Somit haben sie einen Deckel und Boden einer Pieform oder 2 Minipies wenn Sie den Teig in kleine Kreise ausstechen. Den Teig 45 in den Kühlschrank geben und dann in die Pieform oder Minimuffin form geben und backen! Nach dem Auskühlen mit Puderzucker bestreuen. Hält sich in einer Blechdose 4-6 Wochen und wird täglich besser!






German Christmas Honeybread - Weihnachtliches Honigbrot

this is a traditional honeybread that is well established all around Europe - you will especially find it in the Netherlands al year round as breakfast bread or in Skandinavia and Central Europe during the holidays.
I used to get my honeybread from the local bakery or it was given to me as a gift - a few years ago i got this lovely recipe that had to be made immediatly as i am rather fond of this kind of breakfast or as a slice next to a mug of tea or mulled wine.... the house will smell like santas residence and your family will stick around teh kitchen that is for sure. this recipe can doubled. It will make a nice gift or treat at a christmas party or function! It will also keep if you wrap it tightly and keep it in a airtight container!
Give this moist and very special bread a chance  - you won't regret it and make ure you use the best honey there is - as the quality and especially the taste of the honey will make all the difference - if you use cheap plastic tasting honey - your bread will taste the same!

HONEY BREAD

500 g AP flour
17 g baking powder
250 g brown sugar
250 g honey
75 g butter (unsalted)
2 eggs
75 g ground nuts
225 ml milk
1 tsp ground cloves
2 tbsp gingerbread spice
1/2 tsp cinnamon
25 g cocoa

Preheat the oven to 375°F and line a deep baking sheet with parchment paper.
In a heavy skillet bring the sugar, honey and butter to a boil. Mix well. In a huge bowl mix the remaining ingredients and slowly add the sugar mix. Blend well till you have a smooth spreadable dough. Spread it evenly on the baking sheet and bake about 15 -20 Min till done. Let rest for 5 Min. Then ice it if you like with a sugar glace or melted chocolate and sprinkle with decoration.

vergangenes Wochenende habe ich mit meiner besten Freundin Honigbrot für die Adventszeit gebacken. Dieses wunderbare Rezept habe ich von einer guten Freundin vor Jahren bekommen und ich war sehr glücklich darüber weil ich bis dahin mein Honigbrot oder Honigkuchen immer aus Holland mitgenommen habe oder beim Bäcker gekauft hatte... Ich habe das Rezept damals noch am gleichen Tag versucht und seit dem ist es eine Tradition in unserem Haus in der Adventszeit. Meine Mutter hat es auch schon gebacken und verschenkt. Ich habe es anfangs immer mit Zuckerguss und bunten Streuseln gemacht für meinen Sohn und seine Freunde. Dieses Jahr habe ich ihn weggelassen und dafür fest in Folie eingewickelt und in Dosen verpackt - er bleibt dennoch schön saftig und schmeckt uns super zum Frühstück mit Butter und dazu einer Tasse Tee. Meine Freundin hatte ein halbes Blech mit im Zug auf der Heimfahrt... ich kann mir vorstellen das sie sehr populär war im Großraumwagen mit der duftenden Tasche ;-)
Das Rezept läßt sich ganz leicht verdoppeln und ist ein schönes Geschenk für alle Gewürzkuchen und Honigbrot Liebhaber!
Ein wichtiger Hinweis - bitte einen hochwertigen Honig verwenden - denn billiger Honig schmeckt billig - der Honig wird definitiv rausgeschmeckt aus dem Kuchen - nicht sparen - ruhig etwas investieren es lohnt sich!!!

HONIGBROT

500 g Mehl
1 Päckchen Backpulver
250 g braunen Zucker
250 g Honig
75 g Butter
2 Eier
75 g gemahlene Nüsse
1 TL gemahlene Nelken
1/2 TL Zimt
1 Päckchen Lebkuchengewürz
25 g Kakao

Den Backofen auf 180°C vorheizen und ein tiefes Backblech mit Backpapier auslegen oder gut einfetten.
Den Zucker, Honig und die Butter in einem schweren Topf kurz aufkochen lassen und gut verrühren. In einer großen Rührschüssel die restlichen Zutaten gut verrühren und die warme Honigmischung drunterrühren bis ein geschmeidiger streichfähiger Teig entsteht. Diesen auf das Backblech geben und glattstreichen. Ca 15-20 Min backen. Mit einem Stäbchen prüfen ob er durch ist und nun 5 Min ruhen lassen. Anschließend mit Zuckerguss oder Kuvertüre dekorieren und wer mag auch gerne noch mit Streuseln oder Nüssen verzieren.
Hält sich gut eingewickelt und in einer Dose bis zu 3 Wochen.

i have no idea where i got the recipe - doesn't matter it is great, easy, quick and a nice little treat at your christmas party or all year round... espcially popular to those who like it sweet and enjoy a little booze that lingers in there ;-)
This is something anybody can make and looks like it wasn't so easy after all...

2-cups finely crushed vanilla wafers or digestives or your favorit cookie
1-cup icing sugar
1/4-cup almond paste, room temperature
2-1/2-tbsp Kahlua
2-1/2-tbsp Grand Marnier
2-1/2-tbsp Bailey's Irish Cream
2-tbsp white corn syrup
10-12oz. semi-sweet chocolate (best quality makes a lot of a difference)
2-cups very finely crushed toasted almonds or your favorit nut

In a bowl, mix the wafers, sugar, almond paste, liqueurs, and corn syrupMake sure the almond paste is well blended with the other ingredients. Press mixture into shallow pie plate and refrigerate until firm enough to form into balls. This should take 20 minutes or so. Melt chocolate in a double boiler over gently simmering water. Roll mixture into small ball, impale each on a toothpick and dip into the melted chocolate, coating evenly. Roll gently in toasted almonds then place on large trays to harden. Store in airtight container in refrigerator or shelf. Serve at room temperature.

i have made this 2 times now and it is soooo good - i do enjoy fruit cakes and tea cakes a lot but they have to be moist and without candid peel..... THIS IS THE CAKE and it has marzipan!!!

The picture shows you a thin version... next time i will go for a smaller baking tin again...(sorry pic quality is not so great) Alissa

150g/ 1 cup sultanas
100g / 1 package natural coloured glace cherries, halved
150g/ 8 oz dried pears, chopped
100ml/ 1/4 cup white rum
250g marzipan
50g/ 1/4 cup ground almonds
zest of 1 lemon
175g plain flour
100g 1/2 cup caster sugar
100g/ 1/2 cup butter
2 large eggs
1 tsp orange flower water or lemon oil

20cm spring form cake tin, buttered and lined bottom and sides, so that the parchment comes a good 10cm above the rim

the night before, mix sultanas, glace cherries and dried pears in a large bowl, cover with the rum. Dice the marzipan and put it in the freezer. Leave both to soak and freeze overnight.

next day, preheat oven to 140/gas 1. Beat together almonds, lemon zest, sugar, flour, butter and eggs. Add drained fruit, orange flower water and frozen marzipan. Put the mixture into the tin, levelling the surface, and making a slight indent in the middle to get an even surface when cooked.

allow to cool in the tin, rewrap in parchment and foil to store for about a week. Although Nigella does say that she's never managed more than two days' storage ...

saftiger fruchtiger süßer Früchtekuchen... bete den ich je hatte - so soll ein Früchtekuchen sein!! AlissaBlechdose aufbewahren und ruhen lassen 10 Tage und jeden 2. Tag mit Rum bestreichen! Hält sich ewig - wenn man ihn nicht vorher aufgegessen hat
150g Sultanien oder Korinthen
100g Belegkirschen halbiert
150g getrocknetes Obst der Wahl, gehackt (z. Bsp Dörrpflaumen,Birnen, Aprikosen etc)
100ml weißen Rum
250g Marzipan
50g gemahlene Mandeln
Zesten 1 Zitrone
175g Mehl
100g Zucker
100g Butter
2 große Eier
1 Päckchen Vanillezucker
1/2 TL Zitronenaroma

Eine 20 cm Springform buttern und auf dem Boden mit Backpapier auslegen.

Am Abend zuvor die Trockenfrüchte, Rosinen und Belegkirschen in einer Schüssel mit dem Rum ziehen lassen.
Das Marzipan würfeln und über nacht in den Gefrierschrank geben.

Am nächsten Tag den Backofen auf 140°C erhitzen. Die gemahlenen Mandeln, Zitronenzesten, Zucker, Vanillezucker, Mehl und Butter und eiger cremig schlagen und das Zitronenöl, Trockenfrüchte und Marzipanwürfel (gefroren - ist wichtig!) hinzufügen. Alles in die Backform geben und in der Mitte eine mulde eindrücken damit der Kuchen ebenmäßig bacht und sich nicht wölbt!

2 Stunden backen bis der Zahnstpocher sauber rauskommtbake for 2 - 2 1/2 hours, or until skewer comes out clean. Nicht überbacken denn es backt durch die gespeicherte Hitze noch weiter - andererseit sind soviele saftige Früchte und Marzipan drin das es nicht trocken werden kann :-)).

GINGERBREAD PANCAKES

"Here’s something special for a holiday morning breakfast – or anytime. There’s a “variation” following the recipe that makes these pancakes “Caribbean Style” – so don’t set the recipe aside just because the holidays end – they’ll be a hit at any time of year! Note that the batter is made in advance, and refrigerated overnight."

Makes 8 Pancakes

3/4 cup, milk
1 large egg – plus one egg white (from a large egg)
2 tablespoons, molasses
1/2 teaspoon, ground ginger
1/4 teaspoon, ground nutmeg
1/4 teaspoon, ground cloves
pinch of salt (about 1/8 teaspoon)
1 teaspoon, baking powder
1 cup, flour (either white or unbleached)
2 tablespoons, unsalted butter – melted and slightly cooled

Whisk together the milk, egg, egg white, molasses, ginger, nutmeg, cloves, salt and baking powder. Fold in the flour just until completely moistened, then fold in the butter. Refrigerate overnight.

Heat a well-seasoned or Teflon-type griddle –or a lightly greased regular griddle or large skillet. Using half of the batter, drop two tablespoons of batter, one atop the other, to make each of four pancakes. As soon as the pancake rises slightly and the top surface forms bubbles around the edges (it should look as though it won’t run) flip it over with a spatula. Cook only for a minute or two on the second side, just until lightly browned. Repeat with the remaining batter for the remaining four pancakes. Serve on warm plates with butter and maple syrup, or spread with preserves of your choice.

Variations:
For a Caribbean-style version, stir grated coconut (lightly toasted, if desired) into the batter, and replace the milk with coconut milk or coconut cream. [Use fresh, canned, or frozen and thawed unsweetened coconut milk or cream.]
