Cinnamon Puffs on a Stick - Zimtschnecken Lollipops

Hello
i made some Cinnamon puffs on a stick with my leftover puff pastry and as an amusment for the kids yesterday... I have seen them around for quite some time savory and sweet and i think it was this blog i got the idea from.... Picky Palate  - you will find the recipe there and everything you need to know - i don't want to hurt any copyright laws or upset the original inventor.
This is great for Baby Showers, Bridal Showers, Children's Birthday Parties, Bake Sale etc...
Enjoy
Alissa

Hallo
Viel Freude damit

Let chill for at least 2 hours and then cut into cubes and roll them carefully in sugar. you might want to add a fe lavender blossoms.
If you pack it airtight you can keep it in the fridge for 2 months - but you should wait with the cutting and suger decoration just befor serving.
If the cubes are too dry and the sugar doesn't want to stick you may want to brush each cube with a bit water.

Makes 28 cubes

Hallo

Sehr lecker
Viel Spass damit Alissa

Fruchtkonfekt von Lea Linster

600 g reife Früchte ( Aprikosen, Pfirsiche, Passionsfrucht..)
30 g Geliermittel (z. Bsp. Gelfix)
20 g Butter
50 g Kristallzucker (Deko)

Hello

this is another fantastic recipe from Americas Test Kitchen (Cook's Illustrated Holiday Recipes 2006). I have always wanted to make moist and flavourful coconut macaroons - they were either bland, dry, burned on top or too soft... so when i found this recipe in my magazin is was extremly happy and hoped, from the two page story on how they improved the usual coconut macaroon recipe from your recipe box, it would really work and come out with a great success.... I tell you they almost taste like a mounds bar... i don't have to go any fuirther as any coconut friend should really try this easy and foolproof way to make macaroons - the key product is the cream of coconut! this makes a wonderfl gift and takes just 30 Min to make!
Enjoy Alissa

Triple Coconut Macaroons
Adapted by Cook's Illustrated

1 cup cream of coconut (coconut milk is a substitue but will not be as creamy)
2 tablespoons light corn syrup
4 large egg whites
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups unsweetened, shredded, desicated coconut (about 8 ounces)
3 cups sweetened shredded or flaked coconut (about 8 ouces) ( if you have trouble finding it use fresh coconut flesh, shred it and mix with sugar)

Adjust oven racks to upper and lower middle position and heat oven to 375°F. Line 2 baking sheets with parchment paper and lightly spray with nonstick cooking spray.
Whisk together cream of coconut, corn syrup, egg whites, vanilla and salt in small bowl; set aside. Combine unsweetened and sweetened coconut in large bowl; toss together, breaking up clumps ith fingertips. Pour liquid ingredients into coconut and mix with rubber spatula until evenly moistened. Chill dough for 15 Min.
Drop heaping tablespoons of batter onto prepared baking sheets, spacing them about 1 inch apart. Form cookies into loose heaystacks with fingertips, moistening hands with water to prevent sticking. Bake until lighly golden, about 15 minutes, rotating baking sheets from front to back and top to bottom halfway through baking time.
Cool cookies on baking sheets until slightly set, about 2 minutes; remove to wire rack with wide metal spatula and cool to room teperature.

Chocolate Dipped Macaroons

Follow recipe for Triple Coconut Macaroons. Cool baked macaroons to room temperature, about 30 Min. Line 2 baking sheets with parchment paper. Chop 10 ounces semisweet chocolate; melt in microwave or in small heatproof bowl set over pan of almost simmering water.
Holding macaroon by pointed top, dip bottom and 1/2 ince up sides of each cookie in chocolate, scrape off excess with finger and place on baking sheet. Refrigerate until chocolate is  set about 15 Min.

Hallo

Viel Spass damit!
Alissa

Saftige Kokosmakronen

Hello
i have had this recipe printed out for a long time and last night i decided to make some toffee or caramel as gifts... they turned out quite nice after the second batch... The first one didn't set so well but next time i measured very carefully and watches the thermometer. My mom used to make caramels quite often when we were small - she can just see and small when the toffee is right - i still have to learn.
In certain parts of France  - especially the Bretagne they make those wonderful little treats as candy, jam, sauces etc - its quite common and has to be tasted - we enjoy this very much!
It tastes wonderfully decadent and slightly sweet but with the sea salt heavenly tangy...
enjoy
Alissa

Salty Toffees

1 cup heavy cream

5 tablespoons unsalted butter, cut into pieces
1 teaspoon fleur de sel or sea salt
1 1/2 cups sugar
1/4 cup light corn syrup
1/4 cup water
Special equipment: parchment paper; a deep-fat thermometer (or candy thermometer)

Line bottom and sides of an 8-inch square baking pan with parchment paper, then lightly oil parchment.

Bring cream, butter, and fleur de sel to a boil in a small saucepan, then remove from heat and set aside.
Boil sugar, corn syrup, and water in a 3- to 4-quart heavy saucepan, stirring until sugar is dissolved. Boil, without stirring but gently swirling pan, until mixture is a light golden caramel.
Carefully stir in cream mixture (mixture will bubble up) and simmer, stirring frequently, until caramel registers 248°F on thermometer, 10 to 15 minutes. Pour into baking pan and cool 2 hours. Cut into 1-inch pieces, then wrap each piece in a 4-inch square of wax paper, twisting 2 ends to close.

Hallo
Viel Spass damit
Alissa

Karamellbonbons

1 Tasse Schlagsahne
5 EL Butter, in Würfel geschnitten
1 TL Fleur de Sel oder Meersalz
1 1/2 Tassen Zucker
1/4 Tasse Maissirup oder Glukosesirup
1/4 Tasse Wasser

Nutella Rice Krispies Treats - Nutella Rice Krispies Riegel

Nutella Rice Krispies Treats

this is as american as it can gets... this is a very old fashioned retro and still so popular recipe that symbolizes north america so much. My Mom had them when she was a child growing up in Canada, i had that treat very occasionally when i visited Canada as in Germany this is still today not heard of. Kellogg's tried to lauch them into the german market but was never really successful... So anyway here is the retro and wonderfully versatile recipe that i enjoy so much and so does my son and his friends..
It can even be made into healthy treats, gluten- and dairy free product, a vegan bar or a gourmet version with deluxe nut butters, special nuts and cereals... You can make then colorful and dye them for the holidays and decorate them with candy... you can make shape them and make lollipops or whatever comes to mind... David Lebovitz also has a ver ynice version
This is my latest version with Nutella... In Germany we don't use as much peanut butter for us it is the Nutella... Enjoy Alissa

BTW here is a interesting link to the history of the Rice Krispies Treat - it was invented by Mildred Day in 1939..http://www.twisted-candy.com/crispies-treats-history.html

Rice Krispies Treats

1/4 cup butter or magarine
10 oz Marshmallows or 7 oz Marschmallow Fluff
6 Cups Cereals

Melt the butter and marshmallows (either in a pot or microwave) and mix with the cereals till evenly covered and then press with a rubber spatula or greased hands in a 13 x9 inch greased pan. Press down hard and let dry.

Note: For my version i added 2 tbsp Nutella and melted that with the butter and marshmallow fluff. At the end i drizzeld melted bittersweet chocolate over the pan...

Hallo

Viel Freude damit... Alissa

Basisrezept Rice Krispies Treats

3 EL Butter o. Magarine

B-52 Balls

i have no idea where i got the recipe - doesn't matter it is great, easy, quick and a nice little treat at your christmas party or all year round... espcially popular to those who like it sweet and enjoy a little booze that lingers in there ;-)
