English Orange Marmelade Inspired by lamiacucina
Hello,
yesterday i saw a very good looking orange jam in lamiacucina blog (german), i immediatly wanted to make my own as i had a orange curd on my to do list anyhow and had the oranges in the house - so i changed my mind and made an old fashioned orange marmelade! Last night i spend hours scraping the peels clean and finely chopping the peel... the house smelled like an orange plantage... yum... the marmelade is done - it will take a bit to settle but i tried a bit this morning and i think it is not bad - not as sweet as some british brands but good!

inspiriert durch Roberts Orangen Marmeladen Rezept habe ich angefangen zu recherchieren und habe in einem kanadischen Blog ein sehr schönes Rezept gefunden. Es wird allerdings mit Seville Orangen gemacht die ich nicht hatte - mir standen gestern abend lediglich Bio-Orangen aus meinem Naturkostladen zur Verfügung. In England kann man die Seville Orangen speziell für die Marmeladenherstellung bekommen.
Ich habe bis spät in die Nacht an der Marmelade gesessen. Jetzt ist sie Fertig udn schmeckt ganz gut - etwas säuerlicher als ein Fertigprodukt - aber dasmacht ja nichts. Ich verwende diese Marmelade ja nich tnur als Aufstrich sondern auch gerne in Kuchen, Gebäck oder mache damit pikante Sauce oder Marinaden zum Fleisch oder Geflügel..
Die Arbeit lohnt sich... Viel Freude damit

Orangen Marmelade
6 Seville Orangen (oder andere dünnschalige Orangen)
7 1/2 Tassen Zucker
1/4 Tasse Scotch Whiskey oder Cognac
Die Orangen gut waschen und dann achteln und die Stielansätze entfernen. Die Orangen Achtel in einen großen Topf geben und mit Wasser bedecken und 2 Stunden köcheln lassen, bis die Schale sehr weich ist. Die Orangen aus dem Wasser nehmen und das Wasser aufheben!
Nun mit einem Messer das Fruchtfleisch ausschneiden und in eine Schale geben und vorsichtig damit die Schale nicht reißt das weiße der Schale mit einem Grapefruitlöffel oder kleinen Messer ausschaben. Die hauchdünne Orangenschale nun in sehr feine Streifen schneiden. Das Fruchtfleisch durch ein sehr feines Sieb pressen und den Saft auffangen und zu dem Kochwasser geben. Das Fruchtfleisch wegschmeissen.
Nun die Orangenstreifen in das Kochwasser geben und über Nacht ziehen lassen damit sich das Pektin und Geschmack entfalten kann.
Am nächsten Tag die Marmelade kochen indem wir den Zucker zu dem Kochwasser und den Orangenstreifen geben und das Ganze aufkochen und dann simmern lassen bis die Marmelade 103°C erreicht hat (das kann bis zu 60 min dauern!).
Nun den Whiskey (nur wer mag) reinrühren und die Marmelade testen ob sie geliert - d.h. ob sie kleine Falten bildet wenn man sich anstößt.
Dann in sterile Marmeladengläser füllen, fest verschrauben, auf den Kopf stellen und nach 5 Min umdrehen und wer mag kann sie noch einkochen!

Die Quitte ist eine manchmal in Vergessenheit geratene herrliche aromatische Frucht. Sie schaut so ganz anders aus als unsere üblichen Früchte mit dem Flaum und der arabisch anmutenden Form.... in Deutschland bekommen wir sie auch meist beim Türken oder auf dem Markt und wenn wir Glück haben von Bauernhof oder Freunden die das Glück haben einen Quittenbaum im Garten zu haben. Ich habe meine geschenkt bekommen und das sie so perfekt waren und frisch dufteten musste ich sie sofort verarbeiten. Ich hattte selber vorher noch nie mit Quitte gearbeitet das hat immer meine Mutter gemacht. Erst habe ich im CK nach einem Rezept geschaut und habe dann aus den super hilfreichen Beiträgen mein eigenes gemacht und mir einen Entsafter ausgeliehen.
Quince Jelly
1 steam juicer
10 quince
4 apples
Lemon juice
Juice of 2 oranges
2 kilo preserving sugar
2 vanilla beans
Quitten Gelee
1 Entsafter
10 Quitten
4 Äpfel (Rubinette Cox)
Zitronensaft
Saft von zwei Orangen
2 Kilo Gelierzucker 1:1
2 Vanilleschoten
First you clean the quince and scrubb the skin to remove the fuzz, cut of the stem and the core. Do teh same with the apples and you cut them all in cubes and drizzle with lemon juice so that they don't get too brown. Put them in the fruitbasket of the juicer and fill the waterbase with enough water. Place the steam juicer on the stove and let juice for approximatly 2 hours or till you have enough juice.
Zuerst die Quitten abreiben und den Flaum, Strunk und Stielansatz sowie das Kerngehäuse entfernen, Ebenso mit den Äpfeln verfahren. Anschließend in Würfel schneiden und mit Zirtonensaft beträufeln damit die Früchte nicht braun werden. Nun in den Früchtekorb des Entsafters geben. Die Wasserschale bitte mit ausreichend Wasser füllen und den Entsafter auf den Herd stellen und bei volle Hitze ca 2 Stunden entsaften
I got about 2 liters of juice out of it an immediatly filled that in a huge jam pot and added 2 kilo of preserving sugar, orange juice and the vanilla beans and let it boil 3 min till it starts to jell and i took the foam of, took the vanilla beans out and the filled the jelly in sterile jars and seals them and turned th jars around for 5 min. Turned them again and let the jell sit.
Ich habe in etwas 2 Liter Saft bekommen und diesen habe ich mit 2 Kilo Gelierzucker, Orangensaft und den Vanilleschoten aufgekocht, bis es brodelt und dann den Geliertest gemacht. Ein paar Tropfen auf einen Teller gegeben und wenn die Tropfen gelieren nach wenigen Sekunden ist das Gelee fertig. Ich habe den Schaum abgeschöpft. Die Vanilleschoten entfernt und das heiße Gelee in sterile Gläser gefüllt, anschließend verschraubt, für 5 Min umgedreht und dann die Gläser wieder umgedreht und über nacht stehen gelassen um abzukühlen und anzuziehen.

Daraus ist eine wunderbare aromatisches Gelee entstanden das sie unendlich vielseitig für süß und pikante Zwecke einsetzen läßt!
Wonderful Fig Jam - Duftende Feigenkonfitüre

i found some wonderful ripe figs at the market today and rushed home to make this favorit jam of mine... It smells like christmas - is fantastic with cheese or on a cracker but also on challa bread and similar... You just have to try this as it is easym made in the microwave and extremly enjoyable - perfect gift!!

Microwave Fig Jam
The recipe is adapted by Sunset magazine 1979 & Simply Recipes food blog from Elise. BTW i pureed the jam before i filled them in the jarrs!
Yields 2 Jam Jars
1 1/2 cups diced fresh figs (6-10 figs, depending on the size of the figs)
1/2 cup seeded, peeled orange, diced
1 1/2 cups of sugar
1 1/2 teaspoons grated orange peel
3 Tbsp lemon juice
1/4 teaspoon freshly ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/2 teaspoon butter
1 vanilla bean
2 (8-ounce) canning jars
Pour out the jam into jars, leaving 1/4-inch of headroom from the top of the jars. If you want to keep your jam in a cupboard, then use sterilized jars (heat them in the oven at 200°F for 10 minutes). If you plan to eat up quickly and will keep them in the refrigerator, regular clean jars will do

1/4 TL gemahlene Nelken
1/2 TL Zimt
Mark einer Vanilleschote
1/2 TL Butter
In einem Pyrex Messbecher alle Zutaten vermischen und 30 ziehen lassen. In die Mikrowelle geben und im Ganzen 20 Min kochen lassen. ABER bitte alle 3-4 Min stoppen und umrühren!! Sobald der Inhalt anfängt wild zu blubbern gut aufpassen und rausnehmen und mit ienem Löffel einen Marmeladentest machen ob es geliert. Ich habe die Marmelade püriert weil ich es einfach schöner finde. Die heiße leicht flüssige Marmelade in sterile Gläser füllen und 5 Min umgedrehen. Wieder umdrehen und abkühlen lassen!

If it is runny, cook it a couple minutes more. You can also check by seeing how the jam runs off of a spoon. If it seems to firm up a bit as it drips, it's done.

ich war heute einkaufen und habe wunderschöne Feigen entdeckt die ich sofort in eine herrliche Feigenkonfitüre verarbeitet habe. Dieser Aufstrich ist köstlich, geht schnell und gelingt immer - man kann auch einen Schuss Portwein hinzufügen!! Passt hervorragend zu Braten, Käse und auf Hefezopf... Der Fantasie sind keine Grenzen gesetzt. Es ist ein schönes Geschenk - passt prima in einen Gourmetkorb.. jetzt schon mal an Weihnachten denken!!! Viel Freude damit Alissa

Brandied Plums - Brandy Pflaumen

today i read gourmet foodies wonderful blog post about brandied cherries.... too bad our cherries are already over... but i really wanted to make brandied fruit as we had just spoken about htat onthe Germyn Corner in TOH. Shannon had talked about her wonderful brandied cherries for Christmas. So finding that recipe and the beautiful pics today made me move and do something for a nice Christmas gift. Have a look at her site Brandied Cherry recipe. I used the same instructions and recipe - now i have to wait 3 months till i can taste and open the jar.....
Anyway i am pretty sure they will be amazing..

Brandy Pflaumen
ich habe heute morgen in dem schönen Foodblog von Gourmet Foodie die wunderbaren Brandy Kirschen gesehen und musste sie einfach nachmachen hier ist das Rezept und Blog im Original. Lustigerweise hatten wir in Taste of Home Forum im German Corner neulich über Brandy Kirschen gesprochen und irgendwie kein Rezept gepostet. Ich fand das ein klares Zeichen das ich nun die Kirschen machen muss nachdem ich mit der Nase auf dieses Rezept gestossen bin - NUR leider zuspät - frische Kirschen gibt es hier keine mehr - aber Alissa ist ja nicht dumm - nehmen wir das nächste saisonale obst das hervorragend in Brandy, Cognac oder braunem Rum schmecken sollte und hat Pflaumen vom Bauern geholt. Ich habe es sofort eingekocht. Ich habe lediglich verändert das ich eine Zimtstange mit eingekocht habe. Das gibt schöne Geschenke

Brandy Kirschen
3 1/2 Pfund Kirschen o. Pflaumen
6 Tassen Zucker
6 Tassen Brandy oder anderen Alkohol
1. Etwa 12 Einmachgläser mit Deckel und Gummiringen sterilisieren. Einfach in heißem Wasser 15 Min ausköcheln.
2. Während die Gläser steril gekocht werden die Kirschen oder Pflaumen entsteinen.
3. Die Pflaumen oder Kirschen waschen und abtropfen und in die Gläser ganz eng und dicht füllen (ist wichtig!) aber nicht quetschen.
4. Den Zucker über die Pflaumen oder Kirschen in die Gläser füllen bis sie etwas 3/4 voll sind, Das Glas schütteln während der Zuckereinrieselt damit alle Luftlöcher gefüllt werden.
5. Den Brandy oder anderen Alkohol langsam darübergiessen , dabei das Glas schwenken damit der Zucker soviel wie möglich absorbiert. Bis 1/4 unter dem Glasrand auffüllen.
6.Den Rand der Gläser sauber wischen und fest verschliessen!
7. Die Gläser in einen großen Topf stellen und mit Wasser auffüllen ohne ds Wasser in die Einmachgläser sprudelt oder sich füllt!
8. Das Wasser zu einem sprudelnden Kochen bringen für 15 Min.
9. Vom Herd nehmen und 5 Min sitzen lassen
10. Am nächsten Tag den Verschluß gut prüfen ob er dicht versclossen ist
11. Die Gläser alle 4 Stunden auf den Kopf Stellen und wieder umdrehen um zu gewährleisten das sich der Brandy und der Zucker gut vermischen.
12. In einem kühlen, trockenem und dunklem Ort aufbewahren - 3 Monate lagern. Kühlschrank ganz hinten eignet sich dafür oder ein Keller. Bitte 3 monate warten damit sich das Aroma entfalten kann!
Apricot Vanilla Jam - Aprikosen Vanille Konfitüre

it is apricot time in this area and all the local farmes sell them on the fields. Not far from here is a farm that grows very very fragrant and sweet apricots - there was no way i could pas this chance and geht some this year as this year apparently is very good the farmer told me. I had my first apricot in the car and was taken back 20 years - must have been that long since i had his apricots as we moved sine then and i never went back there - silly girl. Today i made a big batch of apricot jam and will make more next week if all that thunder and lightning leaves anything! I whish i could give you a smell or taste sample -they are sooo good... my kitchen smells fantastic... my friend that just dropped by asked wouldn't it be nice to eat that smell -lol This got to be the best apricot jam ever. My mom made some with cherry and white chocolate htat is vey ice aswell but i like my plain one even better ;-) Alissa
Apricot Vanilla Jam
3 lbs fresh sweet apricots, pitted and quartered
3 lbs preserving sugar
1 vanilla bean
1 cup water
First scrape out the inner of the vanilla bean and mix with the sugar. Then dump everything in a heavy pot (even the scraped vanilla bean) and bring to a boil, remove vanilla bean and puree the jam if you like. Take the foam off and take a teaspoon fill of jam from the pot and sump it on a saucer if the jam starts to bild a skin its ready! Fill into steril jars and seal. Turn upside down for 5 min and then turn around and let cool off.
hier in Rheinhessen rund um Mainz ist es unter anderem Aprikosenzeit und die Früchte werden direkt am Feldrand verkauft. Nicht weit von hier gibt es einen Bauern der eine ganz besonders fruchtige duftenden fast pafümierte Aprikosen Sorte hat (muss ihn mal fragen welche das ist). Auf jeden Fall habe ich vorgestern davon umgehend einen Vorrat gekauft und na klar wie könnte es anders sein noch am Stand eine probiert - das hat mich spontan 20 Jahre zurückgeworfen... ich weiss noch als ich ein Kind war haben wir unweit dieser Felder gewohnt und ihc bin mit meiner Schwester früher mit den Rädern in die Felder gefahren und wir haben usn ein paar Aprikosen vom Baum gegessen... ich hatte komplettt vergessen wie richtig gute frische Aprikosen schmecken ... die haben wirklich einen sehr saftigen süßen aromatischen Geschmack sind aber dennoch bissfest. Es sind sehr große Exemplare fast wie Nektarinen. So und heute habe ich die in eine wunderbare Marmelade verwandelt. Hmmm das riecht hier richtig gut meine Freudnin die vorhin spontant vorbei gekommen ist fragte wäre es nicht wunderbar diesen Durft zu essen - davon wird man nicht dick...LG Alissa

1.5 Kg frische süße Aprikosen, entsteint und geviertelt
1.5 Kg Gelierzucker 1:1
1 Vanilleschote, das Mark
1 Tasse Wasser
Alles in einem schweren Topf zum kochen bringen, . Pürieren wer mag, abschäumen und sobald die Konfitüre dicklich wird und geliert in sterile Gläser füllen, verschliessen, auf den Kopf drehen und nach 5 Min wieder umdrehen und abkühlen lassen

yesterday i went to a turkish green grocer and discovered a box with apricot like fruit - it was sitting way behind in a corner and i almost missed it... there was no sign what it is but i thought this would a nice adventure to do something with it.... i got a big bag fill and imediatly took a pic and asked a good friend from my german bulletin board what this is... he , being a garden engineer and lover of forgotten fruit and herbs, told me they were loquats... I started to read research the internet about this fruit and the wherabouts and such and got really sucked into it...It is also called Nispero, Mispero or Nespoli...
This fruit origins in china and traveld all over the world. It is very popular in Japan and went through Hawaii to the USA etc... but they are also very common in the middle east , southern europe, Australia, Brasil and India.... No wonder i caught my eye i am always drawn towards asian things

The fruit itself feels like an apricot and on the inside has 2 big brown seeds, The skin is thin and can be peeled off. It has a sweet bitter taste - hard to discribe... I flipped through many pages and decided to make a recipe from the bahamas... a loquat ginger jam .... i had it on toast this morning and i think it is really nice ut i think it would be much nicer on cheese or with grilled meat!! If you happen to find loquats - try them... they seem to make good cobblers and chutneys too.... Cheers Alissa

Loquat syrup is used in Chinese medicine for soothing the throat like a cough drop. The leaves, combined with other ingredients and known as pipa gao, it acts as a demulcent and an expectorant, as well as to soothe the digestive and respiratory systems. Loquats can also be used to make light wine.
Like most related plants, the seeds (pips) and young leaves of the plant are slightly poisonous, containing small amounts of cyanogenetic glycocides which release cyanide when digested, though the low concentration and bitter flavour normally prevents enough being eaten to cause harm. Wikipedia"

Loquat Ginger Jam
2 lbs loquat, seeded and cut in half
thumb thick piece of ginger grated
2 lbs preserving sugar (or regular suger - loquats have lots of pectin and jell well)
juice of one lime
juice of one orange
2 cup water
Put all in a big heavy poto and bring to a rolling boil while stirring, be careful it doesn't burn, add water if oyu don't have enough liquid!! Take foam of, puree. Make a jell test and if the jam starts to thicken fill in steril jars, seal turn upside down and turn around after 5 Min. Finished!
Japanische Wollmispel
ich habe gestern bei einem Einkauf bei meinem Lieblingstürken in einer versteckten Kiste in der Ecke des Ladens diese aprikosenähnlichen Früchte entdeckt und abenteuerlustig wie ich bin sofort gekauft - es stand kein Schild da was es ist und die Verkäuferin konnte mir auch nicht helfen.... aber ich wusste ich könnte ja in Chefkoch Gwexhaus fragen, wenn einer etwas über Pflanzen, Kräuter und die Natur weiss dann er und so war es auch innerhalb von wenigen Minuten antwortete er auf meine KM mit Foto der für mich wundersamen Frucht mit Wollmispel... Cool... ich mich umgehend in das Thema eingelesen und fasziniert von dieser Pflanze die aus China kommt und gerade in Japan so populär ist... jetzt weiss ich auch warum sie mich so angelacht hat mit meiner Liebe zu Asien musste sie mir ins Auge fallen. Aber in Nahmen Osten und Südeuropa ist die Wollmispel sehr populär und wird gerne in Marmelade, Gelee oder Sirup verwendet. Ich habe recherchiert und mich für ein Rezept aus den Bahamas entschieden und die sehr reifen und duftenden Früchte sofort eingekocht. Die Marmelade habe ihc mir heute morgen auf mein Toast geschmier tund ich fand sie sher lecker nicht so süß wie ich es persönlich lieber mag aber erfrischend und köstliche. Wollmispel Ingwer Marmelade
1 KG Wollmispeln entkernt und halbiert
1 KG Gelierzucker 1:1
Daumendickes Stück Ingwer, gerieben
Saft einer Orange
Saft einer Limette
1-2 Tasse Wasser
Alles in einem großen schweren Topf geben und unter rühren zum kochen bringen, aufpassen das es nicht anbrennt - eventuell mehr Flüssigkeit zu geben, pürieren, Schaum abnehmen und Geliertest machen. Wenn die Marmelade gut iengekocht und dicklich ist in sterile Gläser füllen, verschliessen, auf den Kopf stellen und nach 5 Min umdrehen. Fertig.

Strawberry Vanilla Rum Jam
500 g fresh strawberries
1 vanilla bean
1 shot glass white rum
a handfull rose petals (english roses)
500 g preserving sugar
juice of one lemon
1 tsp vegetable oil
Bring this to a boil, puree in a blender and boil another 2 min and make gel test. Fill in jars and seal. Let them stand upside down 5 min and then turn around.
Note: if you like the boozy flavor add the rum at last and don't boil just stir in! The oil will prevent the jam from foaming!
Erdbeer Vanille Rum Marmelade

500 g frische Erdbeeren
1 Vanilleschote
1 Schnapsglas voll weißen Rum
1 Handvoll Rosenblätter
Saft einer Zitrone
500 g Gelierzucker 1:1
Alles in einen großen Topg geben und zum Kochenbringen, dann pürieren, weiterkochen bis die Marmelade geliert, in sterile Gläser füllen und verschliessen. 5 Min auf den Kopf stellen und wieder umdrehen. Das Pflanzenöl verhindert das schäumen!
Tip: wer den Rumgeschmack möchte sollte den Rum ganz zum Schluss hinzufügen!
Spicy Nashi Pear Jam
Spicy Nashi Pear Jam
i came a cross a few reipe nashi pears for next to nothing which made me think of a nice way to preserve them. As i love nashi pears with meat i decided to make a spicy jam that wold be also lovely with cheeses - especially hard spicy cheeses!
Alissa
4 ripe nachi pears, peeled and cut into cubes (about 600g)
6 ripe nectarines, cut into wedges
1 thumb thick piece if fresh ginger, grated
2 cup apple cider (of apple juice)
2 tea bags of chai tea (i used yogi tea "aura"), open the teabags and dump on fruits
1 kilo preserving sugar (Gelierzucker 1:1)
20 gr citirc acid
Put everything in a huge pot and bring to a boil for 10 min till jam starts to thicken. Make test and see if its ready by putting a dollop of jam on a saucer - if it bilds a skin after a few seconds the jam is ready.
Fill in sterilized jars and seal.
Would be lovely with BBQ chicken, pork chops, meatballs, fish or next to a cheese platter. This also makes a very nice gift!

Würzige Nashi Birnen Marmelade
4 reife Nashi Birnen, geschältund gewürfelt (ca. 600g)
6 reife Nektarinen, in Scheiben geschnitten
1 daumendickes Stück Ingwer, gerieben
2 Tassen Apfelwein oder Apfelsaft
2 Teebeutel Chai Tee (ich habe Yogi Tee "Aura" verwendet)
1 Kilo Gelierzucker 1:1
20 gr Zitronensäure
Alles in einen großen Kochtopf geben (Tee aus dem Tebeutel über die Früchte streuen. Aufkochen und etwas 20 min kochen lassen, dann pürieren, abschäumen und Geliertest machen. Die fertige Marmelade in sterile Gläser füllen und verschliessen. Auf den Kopf drehen und nach 5 Minuten wieder umdrehen.
Schmeckt köstlich zu gegrilltem Fleisch oder Fisch aber auch herrlich zu einer Käseplatte.
Die ist ein wunderschönes Geschenk!

today i decided to start on trying out to work wiht rose petals... someone at the german Chefkoch cummunity talked about a rose jam and reading that post made me want to make use of my moms beautiful old english roses - you can't imagine the fragrance of those - she has many kinds and they are all in bloom at the moment. so i went out there this morning and picked the ones that were almost ready to go anyway. This afternoon after work i tried those recipes. So far so good.. Jelly tastes very nice and sugar need to dry for a week. Cheers Alissa

Rose Petal Jelly
1 cup rose petals (edible non sprayed fragrant )
3/4 cup water
3/4 cup red wine
juice of 1 lemon
2 cups preserving sugar
(or 2 cups of sugar and 1 package of sure jell pectin)
Combine the rose petals, 3/4 cup of water and lemon juice in a blender. Blend until smooth. Slowly add the sugar and blend well.
Bring the 3/4 cup of wine to a boil in a pot and add the rose mix and cook till it starts to thicken. Fill in sterilized jars and seal.
Rosenmarmelade
1 Tasse Rosenblätter
3/4 Tasse Wasser
3/4 Tasse Rotwein
Saft 1 Zitrone
2 Tassen Gelierzucker
Rosenblätter, Wasser, Zucker und Zitronen Saft in einem Blender oder mit einem Zauberstab pürieren.
Wein aufkochen und den Rosemix hinzufügen. Kochen bis es anfängt einzudicken. Sofort in sterile Gläser füllen.
Rose Petal Sugar
1 Cup white sugar
2 cups fresh fragrant rose petals
Shred or mince rose petals. Then pound sugar and rose petals in a mortar and pestle. Place on a covered jar for one week .
Sift out petal bits if desired and store in airtight container.
Rosenzucker
1 Tasse Zucker
2 Tassen Rosenblätter
in einem Blender zerhacken und in eine Schale geben (ist eher eine rosenfarbene Masse)diese dann abgedeckt ein par tage stehen lassen und dann wenn es getrocknet ist zerhacken (mit einer Gabel) und in Beutel oder kleine Schraubgläser fülle
Ist ein sehr schönes Geschenk und eignet sich für Desserts, Kuchen etc..
Ginger-Mango Chutney

was such a lovely day out ... saturday about 29°C, sunshine and me heading towards my local farmers market with an empty basket... was on a mission to make jam and chutney today... on the german corner at the TOH bulletin board we had been talking about jam making the past days and id inspired me to get some jars out to fill and share with my friends... so here is the first recipe i made today i just used things that caught my eye - pineapple, ripe mangos, ginger and zucchini... the rest i had at home anyhow....
Chutneys are especially nice to grilled meat and roasts, fish and cheeses.
Ginger-Mango Chutney
300g fresh ginger cut julienne
300g orange pepper cut into little squares
250g zuchini cut in half lengthwise, cut again and then into wedges
200g fresh mango (i used 1 whole) into cubes
200g fresh pineapple cut in to tidbits
100g golden raisins
4 red onions chopped roughly
2 organic lemons cut in quarters and then in slices
1 liter apple vinegar
1 kg preserving sugar
2 tsp salt
1 tsp cinnamon
Put all ingredients but the sugar and salt in a big pot and let come to a boil on low heat (30 min) till veggies are tender.
Then add sugar and salt and let simmer for another 45 -60 min till most of the liquid has evaporated and reduces to a nice thick chutney. Fill into sterilized jars and seal.
Has to be stored in a dark place for 4 weeks before you can eat - the flavors need to mingle and set!! You got to be patient with this one!! But i tell you a quick test told me this one is going to be darling!! Enjoy Alissa

Raspberry Strawberry Amaretto Jam
500 g fresh raspberries
500 g fresh strawberries, hulled and quartered
1 kg preserving sugar
3 tbsp amaretto
juice of 1 lemon
Put all into a pot and cook till it bubbles and foams. Take foam off!!
After the Jam has reached 105°C (sugar thermometer)and let cook 25 min and stir constantly till it really thinkens.
I put haf the batch through a very fine colander and got rid of the seeds. Then i cooed the seedless jam for antoher 5 min till it thickend again and filled in to hot jars.
The other seeded batch went streight into the jars.
Seal and let cool off... very very good!!n I already put 2 tbsp full on a plate to try immediatly on toast... heaven!

This is an exotic adventurous combination and you might be shaking your head.. no problem... i was sceptic myself when i tasted this jam the first time.. I had seen it on a farmers market and the lady had about a hundred different kinds of jam in her booth - she gave out samples with this jam... i really liked it... it is definatly happy food and cheers you up... banana and vanilla have this effect... the rubarb gives it a bit tartness .. lovely.. you should try it..
I found the recipe on my german recipe board and made it this afternoon - this is a very frugal recipe as most of us always have a few bananas on hand and rhubarb is in season and costs next to nothing.. if you grow it yourself even better (ours is not ready yet) i think the most expensive ingredient in this one is the vanilla bean.

Banana Butter - Bananenaufstrich

This little gem was found in the internet somewhere and has become a real favorit on the TOH bulletin board!! Its easy and fast... a wonderful gift for anybody that loves bananas and a great way to use up those ripe ones...

Banana Butter
1 cup mashed bananas
1 cup canned crushed pinapple with juice
2 tsp lemon juice, fresh
3 1/2 cups granulated sugar / ( Gelierzucker für die deutschen Leser)
3 oz. Liquid Pectin ( ist überflüssig wenn Sie Gelierzucker verwenden)
Measure the first ingredients into a large saucepan. Heat and stir constantly as you bring to a rolling boil. Boil 1 minute. Remove from heat.
Stir in pectin. Stir and skim for 5 min so fruit won't float. Pour into hot sterilized jars to within 1/4" of top. Seal.
Makes 4 half pints.
This is great on your peanut butter sandwich
Bananen Aufstrich
300 g Banane(n), püriert
225 g Ananas (Dose) einschl. Saft
2 TL Zitronensaft, frisch gepresst
800 g Gelierzucker 1:1
Alle Zutaten in einen schweren Topf geben und zum Kochen bringen. Unter ständigem Rühren etwa 1 Min. kochen lassen, den Schaum abschöpfen - alles pürieren nochmals aufwallen lassen. Anschließend in sterilisierte heiße Gläser füllen und verschließen.
Schmeckt lecker auf Hefezopf oder Brioche ... das mögen Kinder besonders gerne.
Tip: Man kann auch eine Vanilleschote mitkochen oder - wenn es nur für Erwachsene ist - auch einen Schuss weißen Rum hinzufügen.
