Carribean Banana Bread *~***~* Karibisches Bananenbrot

Needed something to take for work and something for breakfast for my son. Cecking my pantry after that long penteoste weekend  - not much 2 bananas, baking supplies etc.. so i need a creative idea - i added my supplies into google and this is what came up - i added rum and vanilla - thats all. Wonderfull moist and flavourful recipe - i will make it again as my co-workers were raving about it!

Enjoy  - you will love this i am sure

Carribean Banana Coconut Rum Bread

This recipe is adapted from the blog simple daily recipes
3/4 cup sugar
2 medium very ripe bananas, mashed
1/3 cup melted butter3 egg whites
1/2 cup pecan pieces
1/2 cup unsweetened coconut flakes
1 cup all-purpose flour
1 tbsp brown rum
1 teaspoon cinnamon
1 teaspoon real vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt, omit if using salted butter

Heat oven to 350ºF. Grease 8x8x2-inch pan with cold butter.
Mix sugar, bananas, melted butter, and eggs in large bowl with spoon. Stir in pecans and coconut. Stir in the remaining ingredients all at once.
Spread batter in pan. Bake 25 to 30 minutes, until toothpick inserted in center comes out clean. Carefully invert pan onto cake plate and allow it to cool upside down, until cake naturally falls out of pan onto plate. If it doesn't fall out naturally, tap the bottom of the pan until it loosens. Allow it to cool completely and quickly in the refrigerator before adding frosting. Cooling in the refrigerator helps it to retain the cake's moisture. It only takes 20 minutes or so. You can also frost this cake if you like with a cream cheese frosting. It freezes well without frosting!

Viel Spass

No-Knead Wholemeal Bread - Vollkornbrot ohne Kneten

i love no-knead breads a lot - they are easy and quick to make and foolproof - something for me. i blew two breads the past weeks - i have no idea what i did wrong but they didn't work out the eay i wanted. I just got two new bread baking books and i am going to read them thoroughly to understand more about the chemistry of breads.
There are a gazillion versions of no knead bread around.. here is mine.. its very moist, fluffy and very popular in this house.
Enjoy
Alissa

No-Knead Wholemeal Bread

750 g flour (for example 550 g spelt flour + 200 g whole wheat flour)
20 g fresh yeast
600 ml lukewarm water
1 cup yoghurt
1 tbsp salt
1 cup oatmeal
1/2 cup seeds and nut mix (flaxseeds, pumpkin seeds, sunflour seeds, sesam, walnuts or pine nuts)

Put the flour in a big bowl and make a little well and crumble in the yeast and 3 tbsp of lukewarm water. Let sit 15 min.
Stir in all the other ingredients plus 550ml lukewarm water and mix with a wooden spoon. The dough should be just managable to stir - a bit sticky and lumpy... Let rise in a warm place covered 45 min.
Stir the dough once again and then put into a greased bread pan and preheat the oven to 380°. Let the dough rise anouther 10 min in the pan and then bake 55  - 60 min.

Tip: the softer the dough is the moister the bread will be. Don't make it to thin or the bread will not come out well.
To clean the bowl fill with water and cover and shake so the dough wil come off easier other wise it will stick to the brush and cloth...
Let cool completely before cutting.

Hallo

Whole Wheat Mini Baguette - *~* - Vollkorn-Dinkelstangen

These Mini Baguettes or Breadsticks are something like a roll and very comon in Germany we eat them filled with cold cuts and cheese like you would with a hoagie or sandwich or subway... They are very easy to prepare and fool proof - try this and you will have a very nice healthy bread that is fluffy but you know all the ingredients and can enjoy risk free! This will work fine with gluten free blend aswell as with speltflour!
Have fun
Alissa

Whole Wheat Sticks

1 lb whole wheat flour (i used whole spelt flour)
100 g whole rye flour
2 tsp rosmary (optional)
1 tsp thyme (optional)
1 fresh yeast cake (42g) or 1 package dry yeast
1/8 l whole milk lukewarm
2 tsp salt
1 tbsp honey or corn syrup
4 tbsp olive oil
sesame seeds, poppy seeds or other for decoration

Sieve the flours into a big bowl. In a mortar grind or spice mill grind the thyme and rosmary and then mix into the flour  - you can leave the spice out if you like a plain taste)!
Crumble the fresh yeast in a small bowl into 2 tbsp lukewarm water till dissolved. Mix together 1/4 l lukewarm water with milk, salt, honey and oil and then add to the dough and mix together to a smooth silky dough in your kitchen machine. Let the dough rest and rise, covered, 1 hour in a warm place.
Knead the dough on a floured work place quickly and form 6 balls of the same size and roll them into sticks about 4 cm diameter and 18 x 30 cm. Fold in the edges, roll the sticks and pull them out a bit to give them a bit of preassure. Grease a baking sheete or line with parchment paper and put the sticks on them with the seam side down.
Brush the sticks with water and sprinkle them with poppy seeds, sesame or sunflower seeds - what ever you please and let them rise for another 20 min covered. Preheat the oven to 400°F. Place a ofenproof dish with water in the oven and then bake the bread sticks for 20 Min.

Note: instead of rye you could also use ground quinoa. You could also substitute the thyme with 1/2 tsp paprika. If you like you could also fold in 100g ground parmesan after the dough has risen the first time.

Frienship tunes .... Freundschaft

Two nice songs that i really love from Carole King.... i remember my parents listening to her often and then i rediscovered her for me when i was watching the Gilmore Girls... Since then i have got her Cd and added some tunes to my ipod...
So while enjoying the food friendship with many blog owners, recipe freaks and cooking maniacs  - these two are also for you... at the end you will find a recipe aswell...
Cheers Alissa

Alissa...

Amish Friendship Bread

is a type of bread or cake made from a sourdough starter that is often shared in a manner similar to a chain letter. The starter is a substitute for baking yeast and can be used to make many kinds of yeast-based breads, shared with friends, or frozen for future use. The sweet, cake-like Amish Cinnamon Bread is a common bread that is made from this starter; it is a simple, stirred quickbread that includes a substantial amount of sugar and vegetable oil, with a mild cinnamon flavor. It has characteristics of both pound cake and coffee cake.

A common recipe using this starter suggests using one cup (240 ml) of it to make bread, keeping one cup to start a new cycle, and giving the remaining two cups to friends. The process of sharing the starter makes it somewhat like a chain letter. One cup of starter makes one standard loaf of bread.

There is no reason to think that the sweet, cinnamon-flavored bread has any connection to the Amish people, although the name is taken from them. According to Elizabeth Coblentz, a member of the Old Order Amish and the author of the syndicated column "The Amish Cook",[2] true Amish Friendship Bread is "just sourdough bread that is passed around to the sick and needy".

The recipe for Amish Cinnamon Bread may have first been posted to the internet in 1990, but the recipe itself is several decades old.

Friendship Bread Variations

Honey-Oat-Spelt Bread

trying to make my own bread these days and still looking for a day to day recipe that i can make after work and that keeps a few days.... this brad is pretty easy to make and very tasty. It has a great crum and just the right amount of crust...I was always so frightend to make breads but this one is workable.. but i know you bakers i am still not doing the sourdough thing - which i am trying to avoid. Not brave enough for that step quite yet -lol Anyway as i mentioned before i had to ban wheat from my pantry which is more difficult then i would have ever imagined. That is why i turned this typical american wheat bread into a spelt bread. It is a nice white bread. But you can use regular bread flour in this recipe if you don't want to invest into spelt flour! No problem... enjoy Alissa

Spelt Bread with Honey & Oats

750 g spelt flour (you can use regular bred flour!)
100 g flax seed
100 g old fashioned oats
1/2 liter warm water (not boiling hot - that kills the yeast)
1 tbsp salt
1 tbsp honey
1 fresh yeast cake or 1 package of dry yeast

Mix the flour, seeds, oats in a big bowl, add salt. Then dissolve the yeast in the warm water and add with the honey to the four and knead in your kitchen aid or by hand till you have a smooth dough.

Give it a rest in a bowl covered with a damp dish towel and let rise in a warm place (no draft) for 30 min.

Then preeheat the oven to 400°F/ 200°C. Have a bread pan ready. Knead the dough again and shape into a loaf and put in the pan.
Rest for another 15 min and then bake for 10 Min on 400°F/ 200°C and then turn down to 350°C and bake for another 60 min.

Let cool and serve!

LG Alissa

750 g Dinkelmehl (halb Vollkorn halb 630)
100 g Leinsamen ( ich habe goldene verwendet)
100 g Haferflocken
1/2 Liter warmes Wasser
