not cooking ver much over here - business is going wild before christmas but i just finished a wonderful novel on spices, India and America.... the story takes place in oakland california and tells you about a shopkeeper from India.  That very special and talented women helps customers to solve problems and fulfill wishes wiht the help of her spices... Its again another wonderful book of Chitra Banerjee Divakaruni.
I have already blogged about the conch keeper trilogy - wonderful books or audio books.
I truly enjoy the mystery and old world wisdom that takes you way back and makes you feel warmth but also care... The poetry and pose blend in very nicely with the spices.
It touches you and also fascinated me as i am going to research more about indian spices just for the fun and curiosity... every chapter is devoted to a certain spice. This story is also about the old traditions of indian immigrant to North America and the problems the face with the different lifestyle and customes in the new world. The hardship and prejudgments, about love and dreams...


I read it very fast as i couldn't put it down... today i willstart to read about the spices it self and maybe get my cooking vibe back a bit... This would be a nice gift!

"When you open the bin that sits by the entrance to the store you smell it right away, though it will take a little while for your brain to register that subtle scent, faintly bitter like your skin and almost as familiar.


Brush the surface with your hand, and the silky yellow powder will cling to the pads of your palm, to your fingertips. Dust from a butterfly wing.
Bring it to your face. Rub it on cheek, forehead, chin. Don’t be hesitant. For a thousand years before history began, brides—and those who long to be brides—have done the same. It will erase blemishes and wrinkles, suck away age and fat. For days afterward, your skin will give off a pale golden glow.
Each spice has a day special to it. For turmeric it is Sunday, when light drips fat and butter-colored into the bins to be soaked up glowing, when you pray to the nine planets for love and luck.
Turmeric which is also named halud, meaning yellow, color of daybreak and conch-shell sound. Turmeric the preserver, keeping foods safe in a land of heat and hunger. Turmeric the auspicious spice, placed on the heads of newborns for luck, sprinkled over coconuts at pujas, rubbed into the borders of wedding saris.
But there is more. That is why I pick them only at the precise moment when night slides into day, those bulbous roots like gnarly-brown fingers, why I grind them only when Swati the faith-star shines incandescent in the north.
When I hold it in my hands, the spice speaks to me. Its voice is like evening, like the beginning of the world.
I am turmeric who rose out of the ocean of milk when the devas and asuras churned for the treasures of the universe. I am turmeric who came after the nectar and before the poison and thus lie in between.
Yes, I whisper, swaying to its rhythm. Yes. You are turmeric, shield for heart’s sorrow, anointment for death, hope for rebirth.
Together we sing this song, as we have many times.
And so I think at once of turmeric when Ahuja’s wife comes into my store this morning wearing dark glasses. "

ich bin momentan etwas angeschlagen und beruflich angespannt so kurz vor Weihnachten und finde leider wenig Zeit zum Kochen.... Am Sonntag habe ich Honigbrot gebacken das werde ich auch die Tage bloggen.
Aber die Tage habe ich ein wunderschönes mystisches Buch verschlungen - Die Hüterin der Gewürze von Chitra Banerjee Divakaruni. Ich bin eine große Liebhaberin Ihrer Bücher und habe ja schon von der Trilogie der Muschelträger berichtet.


Dieses Buch nun hat mehr mit einem Foodblog zu tun es handelt von einer Inderin Tilo die in Oakland Kalifornien einen wundersamen kleinen Gewürzladen betreibt. Ihre heildenden Kräfte und seherischen Fähigkeiten helfen Ihr den Kunden geheime Wünsche und Probleme zu lösen mit der Kraft der Gewürze.Jedes Kapitel ist einem Gewürz gewidmet und es wird immer wieder in Nebensätzen und in kleinen Gedichten und Versen die alten indischen Weisheiten und Wirkungen der Gewürze eingeflochten. Die Hüterin der Gewürze“ ist ein Buch über die Probleme von indischen Einwanderern in Amerika und ihrem Spagat zwischen der Tradition und dem neuen modernen Leben und zugleich ein Roman über die Macht und die Gefahren der Liebe, eine Geschichte in die man eintauchen und sich dann in einer fremden Welt verlieren kann.







Ich habe die Aromen und Rezepte förmlich geschmeckt und gerochen - das Buch hat mich sehr beschäftigt und ich konnte es kaum weglegen. Nun da ich die zauberhafte aber auch spannende Geschichte der Gewürzhüterin beendet habe möchte ich gerne rechrschieren in wie weit manche dieser Mixturen und Gerichte gekocht werden.. Ein Glossar für die ganzen indischen Begriffe, Gewürznamen und Gewürze von denen man vor der Lektüre nicht einmal ahnte, dass es sie geben könnte, ist praktischerweise angefügt.






Ich finde es ist ein Winterbuch und ein schönes Geschenk für Frauen die mystische Geschichten über ferne Kulturen lieben und eine Affinität zu fremden Gewürzen haben!

Mediterranean Salt - Mediterranes Salz





Today i mixed a mediterranean salt - just threw a few herbs and salt together and groudned it... my kitchen still smells lovely! This on is perfect as a rub or for all kinds of dishes instead of your plain salt. Cheers Alissa


Mediterranean Salt


1 rosemary branch (pleae only use needles!)
10 orange-mint leaves
2 big garlic cloves
zest of one organic lemon
1 tbsp dried lavender blossoms
200 g coarse sea salt


Put everything in a blender and then dry for 10 min in a 120°C hot oven. Fill in jars and seal!
Mediterranes Salz



1 Rosmarinzweig (nur die Nadeln verwenden)
10 Blätter Orangenminze oder normale Minze
2 Knoblauchzehen
Zesten einer unbehandelten Zitrone
1 EL Lavendelblüten
200 g grobes Salz


Alles in einen Blender geben dursch mischen und in einem vorgeheizten Ofen bei 120°C für 10 Min trocknen. In ein Schraubglas füllen.

Lemons, Ginger, Lemon Balm and much more

today i was in a preserving mood again... this is what i made today using herbs from our garden and spices out of my rack and fruits and such that have to go... Alissa



Ginger Lemonade

this is a bit hot - so if you lie it spicy this is the lemonade for you - the other just water it a bit down by adding juice or wodka or crushed ice!

10 cm ginger, peeled and ver finley chopped
juice of 1 lemon
1 lemon cut into wedges
1 cup sugar
1 liter boiling water

Put the ginger in a teaegg and the other ingredients in a pitcher. then fill with 1 liter boiling water and let sit for 2 hours.

Then chill and serve with cruched ice.. wonderful on a hot day!!

Note: You could also use and orange or lime... ad a bit mint or a shot of vodka!

Ingwer Limonade

dieses Rezept ist aus der DB von Chefkoch und von Skuranee

10 cm Ingwer, geschält und in Streifchen geschnitten

1 Zitrone + Saft einer Zitrone

100 g Zucker

1 Liter kochendes Wasser

Die Zutaten in ein Gefäß füllen und mit einem Liter kochendem Wasser übergießen. Gut durchrühren und 2 Stunden ziehen lassen. Kühlen und bestenfalls auf zerstoßenem Eis servieren.

Tip: Statt Zitronen kann man auch Limonen oder Orangen nehmen oder den Geschmack mit etwas Minze abrunden. Ebenso gut tut auch ein Schuss Wodka pro Glas.





Lemonbalm Syrup

10 fresh lemonbalm stalks
1 liter cold water
25g citric acid
700g sugar

Put the citric acid in a big pot wihtthe water and add the lemonbalm stalks. Let sit 24 hours.

Then cook it and then strain. Then cook the lemon blam water again and add the sugar. Let cook vor 8 min or longer if you like a stronger flavor.

Fill sterilized bottles wiht the hot syrup and seal and then turn the bottles upside down for 5 min.

Will keep 6 Months.

Very nice mixed with vodka and lemon or with juce and sparkling water...

Note: You can use the same recipe with fresh peppermint stalks!!




Zitronenmelisse oder Pepperminz Sirup

Rezept von Eichkatzerl Chefkoch

10 Minze oder Melisse Stängel
1 Liter kaltes Wasser
25 g Zitronensäure
700 g Zucker

Die Zitronensäure mit dem Wasser in einem großen Topf verrühren. Die Minzestängel in das Wasser geben und ca. 24 Stunden stehen lassen.Danach aufkochen lassen, dann abseihen. Das Minzwasser wieder erhitzen und den Zucker darin auflösen. Die Zucker-Minzwasser-Mischung 5-10 Minuten einkochen, so wird der Geschmack intensiver! Noch heiß in Flaschen füllen, diese für 5 Minuten auf den Kopf stellen.Hält mindestens 6 Monate. Mit kaltem Mineralwasser vermischt ergibt der Sirup ein sehr erfrischendes Getränk für heiße Tage. Auch sehr gut für Kinder geeignet.

Für Likör: Den fertigen Sirup z. B. mit Obstler oder Wodka mischen. Evtl. noch mit Zitrone abschmecken.









Ras El Hanout

marrocan spice mix - wonderful with meats, ground meats....or in recipes that ask fo rthis spice mix

2 tsp black peppercorns
1 tsp coriander seeds
1 tsp cumin
1 tsp piment
5 cm cinnamon bark
1/2 nutmeg crushed
1/2 tsp cloves
1/2 tsp cardamom capsula
1 tsp dried rose petals
1 tsp ground ginger
1/2 tsp hot chili powder

Grind all ingredients and fill into a jar!

Homemade Veggie Broth

Make your own vegetable broth powder.... YES YOU CAN!!

I made the same face you are doing... yes you can make your own MSG and Gluten and anything artificial free broth and it is sooooooo easy

This was a big hit a longer time ago the german recipe board... ther are two versions a oven dried or a wet variety ..it is more like a paste and is kept in the fridge....

The recipe is by a german TV chef from bavaria... he is not only good looking and sweet he is a very good chef Alexander Herrmann

Homemade Broth
Alexander Hermann recipe

mix
1 cup onions, finely chopped
4 Tbsp sea salt
add:

1/2 c carrots
1/4 c leek
1/3 c celeriac
mix with
4 tbsp parsley
1 cup tomato (without green part)
mix very well!!

all ingredients need to be finely chopped and will make about 1 pound.

Put them in a shallow oven dish or roaster and bake over night at 160°F - it will dry out completly and aproxamatly one fifth will be left in the morning. Mix well and fill in a jar.

1 tsp with 1 cup water is the dosage if you like to use it...

You will hardly go back to store kind - it is so much nicer

Vegetable Broth Paste

this is a very old fashioned way to preserve what we call soup greens in Germany... And its having a big comback and with every right as this is healthy and tastes great..

makes 10 little jars

1 lb carrots
1 lb leek
1 lb celeriac
1 lb onions
1 lb parsnip
1 lb fine salt
a big bundle flat parsley
2-3 big tomatoes

carrots, celeriak, onions, parsnip and leek, scrubbed,peeled and then weight. Put in to your kitchen machine or blender or put through a meat grinder! Everything needs to be like baby food finely pureed. Mix thoroughly with salt. Fill in jars and make a nice lable... will keep in a dark and cold place for up to a year.

This is a wonderful gift!!

You use it by the teaspoons in your soups, sauces, salad dressings, to cook vegetables anything that needs a little flavor...

It is all natural and MSG free or without artifical flavor!!
